Apple Cinnamon Muffins (With Applesauce)
Good morning everyone! I hope you have all had an awesome week so far. Today, I thought it would be fun to share my quick and simple vegan apple cinnamon muffin recipe. These muffins serve as a great breakfast or snack option. Plus, this recipe comes at the perfect time since apples are in-season in the fall.
These muffins get their sweetness from the peeled and diced apple, applesauce, and pure maple syrup. On top of that, they are super moist because of the applesauce and non-dairy milk used in the muffin batter. These muffins are packed with nutrients and flavor. They are also super easy to meal prep and enjoy all throughout the work week. Anyway, enough on that. Let’s go through a few quick things to note for this recipe. Then, we will dive into the full list of ingredients you will need to make these vegan apple cinnamon muffins.
How Do You Make Vegan Apple Cinnamon Muffins?
You can make vegan apple cinnamon muffins with a wide variety of ingredients. For my recipe specifically, we will be using simple ingredients like oats, cinnamon, fresh apples, etc. The ingredients are also budget friendly, which is another reason that I love this recipe! Now that we’ve covered that, let’s go through all of the ingredients you will need to make this apple cinnamon muffins recipe a smashing success!
Apple Cinnamon Muffins (With Applesauce) – Ingredients
- Quick Oats – The first ingredient you will need for this recipe are the quick oats. The quick oats will be blended up to form a fine oat flour. The oat flour will serve as one of the key dry base ingredients for this recipe. If you’d like, you could also use rolled oats in place of quick oats. If you want to make this muffin recipe gluten free, make sure to use your favorite gluten free oats.
- Coconut Flour – The coconut flour combines perfectly with the oat flour to create the bulk of the dry base for these tasty apple cinnamon muffins. It is another essential ingredient you will need to make this recipe.
- Peeled and Diced Apple – The peeled and diced apple adds sweetness, texture, and apple flavor to these fall themed muffins. You can use whichever kind of apple you enjoy most. I really like pink lady, honeycrisp, and fuji apples. You will want to peel it and dice it finely before gently folding the diced apple pieces into your apple cinnamon muffin batter.
- Cinnamon – The cinnamon is the key spice you will need for this apple cinnamon muffin recipe. After all, you can’t have apple cinnamon muffins without the cinnamon. This spice adds some extra flavor to this recipe, so you definitely don’t want to omit it.
- Baking Powder – The baking powder acts as the first key leavening agent used in this recipe to help the muffins rise.
- Baking Soda – The baking soda is the other essential leavening agent used in this recipe to ensure that the muffins achieve a light and fluffy texture.
- Unsweetened Applesauce – The unsweetened applesauce adds a ton of moisture, sweetness, and apple flavor to this recipe.
- Non-Dairy Milk – The non-dairy milk serves as the main source of liquid for this recipe. It adds creaminess and moisture to the muffin batter. I used unsweetened almond milk, but you can use whichever kind of non-dairy milk you have on hand or enjoy most.
- Pure Maple Syrup – The pure maple syrup adds sweetness, stickiness, and flavor to these apple cinnamon muffins. It is one of my favorite sweeteners to use in vegan baked goods, and this recipe is certainly no exception.
- Coconut Sugar – The coconut sugar adds sweetness to these muffins. A little bit will be added on top of each muffin before you pop them in the oven to bake. This ingredient is the perfect finishing touch for this tasty fall themed treat.
