Good morning everyone! Today I am sharing a super yummy snack recipe with all of you. I have recently been testing out a bunch of different quick and easy snack ideas for busy workdays.

When my schedule is super packed and I am pressed for time, I don’t have the freedom to make complicated recipes that take a long time to prep and cook. So, I rely on simple snacks to provide me with the energy I need to power through the day.

These vanilla protein energy bites truly are the perfect grab and go snack option. If you are looking for a simple, sweet recipe that requires no baking, this one is definitely for you. Furthermore, these energy bites sneak in a bit of protein to keep you fueled between meals. They are loaded with flavor and they have the perfect chewy consistency.

Do You Refrigerate Protein Balls?

After I roll the protein dough into balls, I like to refrigerate the bites for at least an hour to allow them to chill. I personally prefer the taste and texture of the energy bites after they have had a chance to set. You don’t necessarily have to refrigerate the bites before you eat them. I think it really comes down to personal preference.

If the mixture is not coming together and forming a sticky dough, add a little bit of nut milk at a time until you get a stickier consistency that you can easily roll into balls.

  • Vanilla Protein Powder – The vanilla protein powder is used to sweeten the bites. It also adds a ton of vanilla flavor to the base. You can use whichever vegan vanilla protein powder you enjoy most. I used the Orgain Simple creamy vanilla protein powder.
  • Rainbow Sprinkles – The rainbow sprinkles add color and sweetness to this energy bites recipe.
  • Nut Milk – The nut milk adds creaminess and moisture to these vanilla birthday cake protein energy bites. I used unsweetened vanilla almond milk for this recipe, but you can use whichever nut milk you have on hand or enjoy most.

Ingredients
  

  • 1 cup quick oats (blended into a fine oat flour)
  • 3 tbsp vegan vanilla protein powder (I used Orgain Simple in the creamy vanilla flavor)
  • 2 tsp rainbow sprinkles (I used Simple Truth Organic)
  • 1/4 cup nut milk (I used unsweetened vanilla)
  • 2 tbsp creamy peanut butter
  • 2 tbsp pure maple syrup

Instructions
 

  • Combine the oat flour, vanilla protein powder, and rainbow sprinkles in a large mixing bowl.
  • Add the nut milk, peanut butter, and pure maple syrup, then mix again until well combined.
  • Roll the dough into twelve spheres and place them in a container.
  • Refrigerate the energy bites for about one hour to allow them to chill and set.
  • Enjoy the energy bites immediately or store them in the refrigerator for a quick and easy snack.
