This chia pudding gets its name from the vanilla flavor of the chia pudding base, as well as the rainbow sprinkles that are mixed into the chia pudding mixture . This vegan chia seed pudding recipe has a creamy texture, a ton of color, and a sweet taste. This recipe truly is the perfect vegan snack or treat.

Now, let’s talk about chia pudding for a minute. Chia pudding is one of those recipes that people either love or hate. The texture is something that not everyone will enjoy. I personally really like chia pudding, but if it’s not your cup of tea, that’s ok too. If you haven’t tried chia pudding before, give this recipe a try, and decide for yourself if it’s something you like.

I really love the texture that results from combining chia seeds with nut milk. They absorb some of the liquid to form a gel-like consistency. This is exactly the texture you want to achieve when making chia pudding.
  • Vanilla Protein Powder – The vanilla protein powder is an essential ingredient which adds a ton of flavor to the chia pudding base. The protein powder combines with the nut milk and sprinkles to achieve a vanilla “birthday cake” flavored base. I used the Orgain simple protein powder in the creamy vanilla flavor, but you can use whichever vanilla protein powder you like the taste of.
  • Rainbow Sprinkles – The rainbow sprinkles add a ton of color and some sweetness to this birthday cake chia pudding recipe. You can use whichever kind you have on hand or prefer.
  • Nut Milk – The next ingredient you will need for this chia pudding recipe is the nut milk. I used unsweetened vanilla almond milk, but you can use whichever nut milk you have on hand or enjoy most. I will say that I highly recommend the vanilla kind because I think it adds a little something extra to the overall flavor profile.
  • Pure Maple Syrup – The pure maple syrup is the final key ingredient which adds sweetness and flavor to this chia pudding recipe. It is an essential ingredient that you definitely do not want to forget.

Ingredients
  

  • 2 tbsp chia seeds
  • 1 tbsp vanilla protein powder (I used Orgain Simple vanilla protein powder)
  • 1 tsp rainbow sprinkles
  • 1/2 cup nut milk (I used unsweetened vanilla almond milk)
  • 1/2 tbsp pure maple syrup

Instructions
 

  • Add the nut milk, pure maple syrup, and vanilla protein powder to a mixing bowl.
  • Whisk all ingredients thoroughly to combine.
  • Add the chia seeds, then mix again.
  • Gently mix in the rainbow sprinkles.
  • Pour the chia pudding mixture into a mason jar and screw the lid on tightly.
  • Pop the chia pudding in the refrigerator for at least an hour to set.
