Good morning everyone! Today, I am so excited to provide you with a delicious, easy, and tasty vegan chia seed pudding recipe. If you aren’t familiar with chia seeds, they are essentially these tiny black seeds with a crunchy texture. They are an easy superfood to add to your diet. With this recipe, you can quickly and easily incorporate them into a delicious and flavorful snack.

I first heard about chia seeds when I was in high school. I remember seeing people adding them on top of smoothie bowls, and I eventually decided to give them a try. I added them to my oatmeal and smoothie bowls, and I found that they added some nutrients to my breakfast without impacting the flavor. In my opinion, they don’t really have a strong taste. However, they add a nice crunch on top of things like smoothies.

Chia seeds are also very unique because they actually absorb some of the liquid that you put them in. They form a gel-like consistency, which makes them perfect to use in vegan chia seed pudding. So, let’s get right into today’s recipe for simple vegan chia pudding. I will first go through a few quick things to note for this recipe.


How Do You Make Vegan Chia Pudding?

In order to make vegan chia pudding, you really only need a few simple ingredients. Aside from the chia seeds, you will need your favorite non-dairy milk of choice. I like almond milk, but you can easily sub oat milk, soy milk, or any other non-dairy milk you prefer. In addition to that, you will need a liquid sweetener (such as pure maple syrup), a dash of cinnamon, some fresh fruit, and any other toppings you would like. With these simple ingredients, you can whip up a vegan chia pudding in just minutes.

Now that we have covered a few quick things to note for this recipe, let’s go through the full list of ingredients you will need to make this simple vegan chia pudding recipe a smashing success!


Simple Vegan Chia Pudding – Ingredients

  • Chia Seeds – The first ingredient you will need for this recipe is, of course, the chia seeds. These will act as the binding agent to hold the chia pudding together. Without them, you would not have that gel-like consistency.
  • Fresh Fruit – The fresh fruit adds sweetness, color, and flavor to this chia pudding recipe. As you can tell from the photos, I chose to use strawberries as my fresh fruit of choice on the day of photographing this recipe. However, I have also made this chia pudding recipe with blueberries, banana slices, and mango chunks on top. All of these variations were absolutely delicious, so feel free to use whichever fruit you prefer or have on hand.
  • Cinnamon – A dash of cinnamon is all you need to elevate the base of this recipe. It adds some extra depth of flavor to the chia pudding mixture, so I highly recommend it. A little bit goes a long way with this ingredient.
  • Non-Dairy Milk – The non-dairy milk combines with the chia seeds to form the creamy chia pudding base. I used unsweetened vanilla almond milk for this recipe, but you can use whichever non-dairy milk you prefer or have on hand. If you want the base of your chia pudding to be extra sweet, you can use a sweetened non-dairy milk. I like to add pure maple syrup to my liquid, so I find that I don’t need sweetened almond milk.
  • Pure Maple Syrup – The maple syrup add sweetness, flavor, and a bit of stickiness to this recipe. It is the perfect addition to this simple vegan chia pudding.
  • Optional Toppings – While the above ingredients are sufficient to make this simple vegan chia pudding, there are many other toppings you can add for even more flavor. Some of my favorite optional toppings to add to my chia pudding include nut butter, pumpkin seeds, chocolate chips, etc. As you can tell from the photos, I chopped up a homemade peanut butter cup and added it on top of my chia pudding. It paired really well with the sweet chia pudding and strawberries!

Ingredients
  

  • 2 tbsp chia seeds
  • a dash of cinnamon
  • 1/4 cup fresh sliced strawberries (or other fruit of choice)
  • 1/4 cup + 2 tbsp non-dairy milk (I used unsweetened vanilla almond milk)
  • 1/2 tbsp pure maple syrup
  • optional toppings (I added a chopped peanut butter cup)

Instructions
 

  • In a small bowl, mix together the non-dairy milk, pure maple syrup, and cinnamon.
  • Add the chia seeds and mix again until well combined.
  • Cover the mixture and refrigerate it until a thick, gel-like consistency is achieved (at least one hour).
  • When you're ready to eat your chia pudding, add the strawberry slices and any other desired toppings (I added a peanut butter cup on top of mine).
  • Dig in and enjoy!
