Happy Monday everyone! I hope you all had a safe and fun New Year’s Eve / Day, and that you are ready to hit the ground running in 2016. Each year passes us by incredibly quickly, so don’t forget to look back on the amazing memories you made in 2015. After reflecting on 2015 myself, I have decided that I’d like to commit more time to this blog in 2016.
I am going to try and post recipes more consistently, and this blueberry banana nice cream recipe marks the first one of the year :). As you guys know, I absolutely love vegan ice cream of any kind. After discovering this banana ice cream, I just can’t get enough of it, especially in the spring and summer.
Banana ice cream is super budget friendly and easy to make. You don’t have to churn it, so it takes a lot of the hard work out of making ice cream at home. I have tried so many different flavor combinations of banana ice cream, including banana chocolate chip, peanut butter banana, strawberry banana, and the list goes on. This blueberry banana one is my most recent flavor combination, and it does not disappoint.
All you have to do to make vegan banana nice cream is throw some frozen fruit in a high speed blender or food processor with a splash of non-dairy milk. After a few minutes, you will end up with a thick and creamy vegan “nice” cream. I love how customizable banana ice cream is – you can add whatever toppings you’d like (peanut butter, chocolate chips, coconut flakes, etc.).
Now, let’s go over some quick things to note for this recipe. Then, we will take a look at the list of ingredients you will need to make this vegan blueberry banana ice cream recipe a smashing success.
What Is Nice Cream Made Of?
Nice cream is made of a number of different ingredients, but the base usually starts with frozen bananas. Essentially, nice cream is a thick, creamy, vegan dessert made out of frozen fruit. What differentiates nice cream from traditional smoothies is the texture. Nice cream tends to have a much thicker, creamier consistency than smoothies. It is usually eaten with a spoon, so it’s more of a smoothie bowl. However, it does have an incredibly creamy, ice cream like texture. In order to achieve this texture, a high speed blender or food processor is often used, as well as a minimal amount of liquid (this keep the consistency super thick).
Blueberry Banana Nice Cream – Ingredients
- Frozen Ripe Banana – This ingredient should come as no surprise, as it serves as the key base ingredient for just about any vegan nice cream recipe. My best tip here is to freeze your ripe bananas in chunks so that they are a bit easier to blend. Also, make sure to freeze your banana when it is ripe or overripe to ensure that your ice cream turns out as sweet as possible.
- Frozen Blueberries – The second key ingredient you will need for this recipe is the frozen blueberries. This ingredient adds a ton of flavor to your vegan ice cream. The blueberries also transform the color of your banana ice cream into a beautiful bluish purple hue. You can use regular frozen blueberries or wild frozen blueberries. I have tried both options, and they turn out equally delicious.
- Nut Milk – The nut milk acts as a blending aid for your blueberry banana ice cream. I used unsweetened vanilla almond milk, but you can use whichever kind of nut milk you have on hand or enjoy most. A little bit is all you need. The less nut milk you use, the thicker your nice cream will turn out.
- Optional Toppings – There are many different optional toppings you can add to your vegan banana ice cream, such as nut butter, chocolate chips, dry cereal, granola, or coconut flakes. As you can tell from the photos, I chose coconut flakes this time.

Blueberry Banana Nice Cream
Ingredients
- 1 cup frozen blueberries
- 1 medium ripe banana (frozen in chunks)
- 1/4 cup nut milk (I used unsweetened vanilla almond milk)
- optional toppings (coconut flakes, chocolate chips, nut butter, etc.)
Instructions
- Add the frozen banana, frozen blueberries, and nut milk to a high speed blender or food processor.
- Blend until a smooth and creamy consistency is achieved, stopping to scrape the sides as necessary to aid blending.
- Scoop the blueberry banana ice cream into a serving dish.
- Add whatever toppings you'd like.
- Dig in and enjoy!
