This recipe is insanely easy to make because the pancake batter only require three ingredients (four if you count the water). The pancakes taste incredible when you pile on delicious toppings such as fresh fruit, nut butter, and pure maple syrup. You truly can customize the toppings for a unique flavor combination. I love to add fresh banana slices, strawberries, blueberries, etc., as well as pure maple syrup for sweetness.

Now, before we get into the recipe, let’s go over some quick logisitics, as well as the list of ingredients you will need to make this pancake recipe a smashing success.

Ingredients

  • 1 small ripe banana
  • 1 flax egg
  • 3 – 4 tbsp water
  • peanut butter + pure maple syrup (for topping)

Instructions
 

  • Add the oats, 3/4 of the banana, the flax egg, and three tablespoons of water to a high speed blender or food processor.
  • Blend until all ingredients are well incorporated.
  • Add a bit more water as necessary to achieve a pancake batter consistency.
  • Pour dollops of batter onto a greased pan or pancake griddle.
  • Cook the pancakes for a few minutes on each side until golden brown.
