Vegan Strawberry Chicken Salad

A quick, easy, and delicious salad packed with plant based protein.

- 2 cups greens of choice (I used cruciferous crunch mix)
- 3 vegan chicken nuggets (I used Morningstar Farms brand)
- 1/4 cup chopped avocado
- 1/4 cup fresh strawberries (finely chopped)
- 1/4 cup grape tomatoes (finely chopped)
- 2 tbsp fresh chopped bell pepper (I like red, orange, or yellow bell pepper)
- 1 tsp nutritional yeast seasoning
- 2 tbsp green goddess dressing (or similar dressing)
Cook the vegan chicken nuggets per the package directions, then set them aside to cool for a bit.
Add the greens, avocado, strawberries, tomatoes, bell pepper, and nutritional yeast seasoning to a salad bowl.
Chop the vegan chicken nuggets into small cubes, then add them to the salad.
Pour the dressing on top of the salad.
Mix everything well to combine.
Dig in and enjoy!
