Good morning friends! I can’t believe it has been almost two months since I last posted on the blog. The holidays were super busy and I’ve had so much going on with work since the start of the new year, so my blog has definitely taken a bit of a back seat. Hopefully, I can prioritize recipe creating and posting moving forward.

Ideally, I would love to get back to a once per week posting schedule, so that’s my goal from here on out. I want to do a nice mix of sweet and savory recipes, although I’ve posted sweet recipes more heavily in the past. Of course, there is still a huge collection of delicious recipes that you guys can explore in the meantime.

Today’s recipe is for a simple yet delicious peanut butter chocolate chip protein mug cake. This mug cake is the perfect single serve dessert that cooks in just 60 seconds. It is rich, decadent, and so easy to make.

How Do You Make a Protein Cake in a Mug?

Making a protein cake in a mug is much easier than you might think. The first step is to select your favorite protein powder and decide what flavor of mug cake you would like to make. For this recipe, I went with a chocolate mug cake base. I used the Orgain simple protein powder in the chocolate peanut butter cup flavor to achieve the chocolate cake flavor.

Then, you will want to add some sort of flour to ensure the mug cake achieves a light and fluffy texture. I went with oat flour since it’s budget friendly and gluten free friendly.

Once you have the dry base ingredients selected, you simply need to add your non-dairy milk of choice, mix all ingredients to form a smooth cake batter, and transfer the mixture to a microwave safe dish. I like to use a small ramekin.

Then, you will pop your mug cake in the microwave to cook for about 60 seconds, add your desired toppings, let the mug cake cool for a bit, and dig in and enjoy! For this mug cake, I chose peanut butter and chocolate chips as my toppings. These toppings, paired with the chocolate cake base, work together to create the perfect peanut butter chocolate chip protein mug cake.

  • Quick Cooking Oats – The next ingredient you will want for this recipe are the quick oats. These will be blended up to form a fine oat flour. This ingredient, combined with the chocolate protein powder, serves as the perfect dry base for your mug cake. You could also sub rolled oats in place of the quick oats if you prefer.
  • Nut Milk – The next ingredient you will want for this recipe is the nut milk. This ingredient add creaminess and moisture to your mug cake. I used unsweetened vanilla almond milk, but you can use whichever kind you prefer or have on hand.
  • Peanut Butter – The peanut butter is the first key topping for this protein mug cake. It adds richness and flavor to the mug cake.
  • Dark Chocolate Chips – The chocolate chips are the final topping which adds rich chocolate flavor and some extra sweetness to your protein mug cake. You can use whichever kind you like. I really enjoy dark chocolate chips, but you could use semi-sweet chips for an even sweeter mug cake.

Ingredients
  

  • 1 scoop vegan chocolate protein powder (1 scoop = 19 grams, I used Orgain Simple)
  • 2 tbsp quick oats (blended into a fine oat flour)
  • 1/4 cup + 1 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 1 tbsp creamy peanut butter
  • 1/2 tbsp dark chocolate chips

Instructions
 

  • In a small mixing bowl, combine the protein powder and oat flour.
  • Add the nut milk and mix again to form a smooth cake batter.
  • Pour the cake batter into a microwave safe mug or ramekin.
  • Microwave the mug cake for about 60 seconds, or until mostly firm.
  • Let the mug cake cool for a bit.
  • Top the mug cake with the peanut butter and chocolate chips.
