No Churn Mint Chocolate Chip Ice Cream

Good morning friends! Today, I am excited to share a festive recipe with all of you in celebration of St. Patrick’s Day (which passed just a few days ago). I decided to make some mint chocolate chip banana ice cream because it is green in color.

This ice cream recipe is simple, delicious, and made with less than ten ingredients. It requires no churning, and the ingredients come together in just minutes. It is a tasty, sweet treat to end the night with, and it perfectly combines both mint and chocolate flavors.

Also, on a totally unrelated note, was anyone else bummed about daylight savings last weekend? I absolutely love when daylight savings comes around in the fall since we gain an hour of light in the morning, but I always dread losing an hour in the spring. I now have to adjust my sleep schedule to get re-aligned with the clock. Plus, I really enjoy waking up early, so I’m going to miss that extra hour of daylight in the morning. At least we are approaching longer days with warm weather and sunshine. Anyways, enough about daylight savings.

Let’s go over some quick things you should know before you make this mint chocolate chip ice cream recipe (and no churn ice cream in general). Then, we can dive into the list of ingredients you will need to make this ice cream recipe a smashing success.


How To Make No Churn Ice Cream From Scratch

Before we get into the mint chocolate chip banana ice cream recipe, I want to go over the overall process of making no churn ice cream at home. There are a few key steps required to make no churn ice cream from scratch. The following five steps are a few of the most essential ones:

  1. Add all ingredients to a high speed blender or food processor. Make sure to use a very small amount of liquid so that your ice cream achieves the thickest texture possible.
  2. Blend the mixture for a few minutes until a smooth and creamy consistency is achieved. You can stop to scrape down the sides as necessary to aid blending.
  3. Fold in the chocolate chips (you can also add more on top if desired).
  4. Transfer the banana ice cream to a serving dish.
  5. Eat! This is the fun part. Dig in and enjoy your ice cream fresh and cold.

Does Ice Cream Need To Churn?

A very common question about making homemade ice cream is whether or not it needs to be churned. While traditional ice cream is typically churned to achieve a smooth texture and rich consistency, banana ice cream requires no churning of any kind. This is actually one of the reasons I love banana ice cream. It cuts down on the time and effort required to make your ice cream. Plus, you don’t have to have an ice cream maker.

In order to make your ice cream at home without following a churning process, you simply need to use frozen fruit, a little bit of liquid (I typically use almond milk), and a high speed blender or food processor. I like to use my KitchenAid Food Chopper to make my vegan banana ice cream. I have made many different flavors, including blueberry banana, strawberry banana, peanut butter banana, chocolate chip, and the list goes on. This mint chocolate chip flavor is my most recent combination.

  • Frozen Banana – The frozen banana chunks serve as the key base for this mint chocolate chip ice cream recipe. Make sure to freeze your bananas when they are ripe for optimal sweetness.
  • Spinach – The spinach adds nutrients and a beautiful green color to your mint chip ice cream.
  • Miniature Semi-Sweet Chocolate Chips – The chocolate chips add sweetness and rich chocolate flavor to this recipe.
  • Nut Milk – The nut milk serves as the key source of liquid which transforms this recipe into a tasty and creamy mint chocolate chip banana ice cream.
  • Pure Peppermint Extract – The pure peppermint extract is essential to add peppermint flavor to your ice cream.

Ingredients
  

  • 1 1/2 medium ripe bananas (frozen in chunks)
  • 1/4 cup tightly packed spinach
  • 1 tbsp mini semi-sweet chocolate chips
  • 1 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 1/8 tsp pure peppermint extract

Instructions
 

  • Blend the spinach and nut milk together until well combined.
  • Add the frozen banana and a few drops of the pure peppermint extract to a high speed food processor along with the blended spinach and nut milk.
  • Blend for a few minutes until a smooth and creamy consistency is achieved.
  • Slowly add more pure peppermint extract, a few drops at a time, until the desired peppermint flavor is achieved.
  • Gently fold in the chocolate chips.
  • Transfer the ice cream to a serving dish.
  • Top with more chocolate chips.
