(frozen in chunks)

tightly packed spinach

mini semi-sweet chocolate chips

tbsp
nut milk
(I used unsweetened vanilla almond milk)

pure peppermint extract
Instructions
Blend the spinach and nut milk together until well combined.
Add the frozen banana and a few drops of the pure peppermint extract to a high speed food processor along with the blended spinach and nut milk.
Blend for a few minutes until a smooth and creamy consistency is achieved.
Slowly add more pure peppermint extract, a few drops at a time, until the desired peppermint flavor is achieved.
Gently fold in the chocolate chips.
Transfer the ice cream to a serving dish.
Top with more chocolate chips.
Dig in and enjoy!
