I call this banana bread granola because it includes ingredients like ripe mashed banana and walnut pieces. This granola recipe has an incredible crunchy texture, it is completely vegan, and it requires less than ten ingredients. It is sweetened with pure maple syrup and ripe banana, and it is also very easy to pack up and take with you on the go for a quick snack. Or, you could use it on top of smoothies for an insanely delicious flavor and texture combination.

I don’t know about you guys, but I like to make my granola nice and crunchy. I keep the mixture a bit on the dryer side, which ensures that the granola firms up in the oven. Then, after I let it sit in the fridge for a bit, it really crisps up to achieve the perfect crunchy texture. The dry quick oats and quinoa are two of the most crucial ingredients that create the perfect crunchy texture. Ingredients
  

  • 1/2 cup quick oats
  • 1/4 cup dry quinoa
  • 1/4 small ripe banana
  • 1 tbsp finely chopped walnuts
  • 1/4 tsp cinnamon
  • 2 tbsp pure maple syrup
  • 1 tbsp creamy peanut butter

Instructions
 

  • Preheat the oven to 300° F.
  • Combine the quick oats, quinoa, chopped walnuts, and cinnamon in a mixing bowl.
  • Add the ripe mashed banana, creamy peanut butter, and pure maple syrup, and mix again.
  • Press the granola mixture onto a lined or greased baking sheet in a layer that is about 1/4" thick.
  • Cook your granola mixture for about 25 – 30 minutes, or until firm.

  • Let the granola cool, break it into clusters, then refrigerate the granola for a bit to make it extra crunchy.
