- 1/2 cup quick oats
- 1/4 cup dry quinoa
- 1/4 small ripe banana
- 1 tbsp finely chopped walnuts
- 1/4 tsp cinnamon
- 2 tbsp pure maple syrup
- 1 tbsp creamy peanut butter
Preheat the oven to 300° F.
Combine the quick oats, quinoa, chopped walnuts, and cinnamon in a mixing bowl.
Add the ripe mashed banana, creamy peanut butter, and pure maple syrup, and mix again.
Press the granola mixture onto a lined or greased baking sheet in a layer that is about 1/4" thick.
Cook your granola mixture for about 25 - 30 minutes, or until firm.
Let the granola cool, break it into clusters, then refrigerate the granola for a bit to make it extra crunchy.
