Good morning friends! Today I am sharing a simple and sweet apple cinnamon chia pudding recipe. This is the perfect snack to meal prep, stick in the refrigerator overnight to thicken, and enjoy the following day.
Although I do work remotely from home right now, I still like to meal prep most of my lunches and snacks. Doing so saves me a ton of time during the work week and ensures that I always have healthy food ready to grab and eat whenever I get hungry. What Is Chia Seed Pudding Made Of?
Chia pudding can be made many different ways. With this recipe in particular, I use nut milk and chia seeds for the base. Since I’m vegan, I always make my chia pudding with some sort of non-dairy milk. I really enjoy using unsweetened vanilla almond milk, which is what I used for this recipe. The vanilla adds extra dimension to the recipe, but you could probably add a tiny bit of pure vanilla extract to achieve a similar flavor profile.
In addition to the chia seeds and nut milk, chia pudding usually has some sort of sweetener as well as toppings. I like to use pure maple syrup in my chia seed pudding. It gives the pudding a nice and sweet flavor while maintaining a thick and creamy texture. As far as fruit goes, I chose fresh chopped apple pieces for this recipe.
What Does Chia Pudding Taste Like?
Chia pudding has a very unique texture and taste. It is basically a thick, creamy, and cold mixture. Chia seeds themselves don’t have much flavor, but they do absorb the liquid that they are placed in. Since I sweetened my nut milk mixture with pure maple syrup, apple pieces, etc., this chia pudding tastes like a sweet apple cinnamon masterpiece. I also include nut butter as the final topping, which adds richness and flavor to the chia pudding. I know the texture of chia pudding isn’t for everyone, but I personally really enjoy it.

- Chia Seeds – The chia seeds are the first essential ingredient you will need for this recipe. They combine perfectly with the nut milk to create a thick and creamy base.
- Finely Chopped Apple – The finely chopped apple is another key ingredient for apple cinnamon chia pudding. You can use whichever kind you like best. I used a gala apple, but I also love pink lady and honeycrisp apples!
- Ground Cinnamon – The ground cinnamon adds a ton of spice. It also pairs really nicely with the apple. A little bit goes a long way, but it is an ingredient that you definitely do not want to omit.
- Nut Milk – The nut milk combines with the chia seeds to create a thick and creamy base. I used unsweetened vanilla almond milk, but you can use whichever one you have on hand or enjoy most.
- Pure Maple Syrup – The pure maple syrup adds sweetness to the recipe. It also pairs incredibly well with the fresh apple pieces.
- Unsweetened Applesauce – The unsweetened applesauce is used for additional moisture and sweetness. It is a nice little add-in that complements the apple and cinnamon flavors already present.
- Creamy Peanut Butter – The creamy peanut butter is used as a topping for the chia pudding. It tastes delicious with all the other ingredients. You can use an allergy friendly sub if you prefer, such as another nut or seed butter. However, I do not recommend omitting nut/seed butter completely, as this ingredient adds a ton of flavor.

Apple Cinnamon Chia Pudding With Almond Milk
Ingredients
- 1/2 cup finely chopped apple (I used a gala apple)
- 2 tbsp chia seeds
- 1/4 tsp ground cinnamon
- 1/2 cup nut milk (I used unsweetened vanilla almond milk
- 1 tbsp unsweetened applesauce
- 1/2 tbsp pure maple syrup
- 1 tbsp creamy peanut butter (for topping)
Instructions
- Add the chia seeds, cinnamon, nut milk, applesauce, and pure maple syrup to a bowl, and mix to combine thoroughly.
- Gently fold in the chopped apple pieces.
- Transfer the mixture to a mason jar and screw the lid on tightly.
- Place the chia pudding in the refrigerator overnight to chill and thicken.
- When you're ready to eat your chia pudding, top it off with the peanut butter, pure maple syrup to taste, and optional chopped walnut pieces.
- Dig in and enjoy!
