Ingredients
  

  • 1/2 cup finely chopped apple (I used a gala apple)
  • 2 tbsp chia seeds
  • 1/4 tsp ground cinnamon
  • 1/2 cup nut milk (I used unsweetened vanilla almond milk
  • 1 tbsp unsweetened applesauce
  • 1/2 tbsp pure maple syrup
  • 1 tbsp creamy peanut butter (for topping)

Instructions
 

  • Add the chia seeds, cinnamon, nut milk, applesauce, and pure maple syrup to a bowl, and mix to combine thoroughly.
  • Gently fold in the chopped apple pieces.
  • Transfer the mixture to a mason jar and screw the lid on tightly.
  • Place the chia pudding in the refrigerator overnight to chill and thicken.

  • When you're ready to eat your chia pudding, top it off with the peanut butter, pure maple syrup to taste, and optional chopped walnut pieces.
