Peanut Butter Chocolate Chip Baked Oats

Good morning friends! For today’s recipe, I am sharing my simple yet insanely delicious peanut butter chocolate chip baked oats for one. This single serve recipe comes together in just a few minutes and requires less than ten ingredients.

It is just the right amount to feed one person, but you could easily increase the ingredient amounts to serve multiple people. The base of this recipe is packed with flavor, sweetness, and protein. The texture comes out super fluffy and cake-like, so it tastes like you are eating dessert for breakfast (plus it’s healthy, vegan, and can be made gluten free!).

I have always loved the combination of chocolate and peanut butter, so it is about time I get a baked oats recipe on the blog that utilizes this exceptional combination.

Now, let’s go through some logistics you should know before making these baked oats, including some commonly asked questions and the list of ingredients you will need for these peanut butter chocolate chip baked oats.

What Is The Best Way To Cook Oats?

There are so many ways to cook oats. Really, there is no “best” way to cook oats. It depends on your personal preferences and what texture/consistency you are in the mood for. If you want a fluffier, cake-like texture, baked oats is best. If you want a chilled, mushier oatmeal that you can grab and go in the morning, overnight oats is a great option. If you want something hot and creamy, go for stovetop or microwave oatmeal.

Today, we are making a fluffy, cake-like baked oats recipe. So, if you want a sweet, cakey, vegan breakfast or dessert, try this recipe out.

How Do You Bake With Oats?

Baking with oats is really quite easy. There are many different ways to bake with oats, and you can even use them in recipes that aren’t traditional oatmeal.

For example, I have made brownies, banana bread, cookies, and more using oats. I have even made savory oatmeal (which I know isn’t for everyone, but I find it super tasty).

The point is, baking with oats is much easier than you might think. It is cost effective, packed with nutrients, and it can help you make recipes that are gluten free since many brands offer gluten free oats.

With this recipe specifically, you will combine all of your ingredients, including the oats, to form a thick and smooth oatmeal batter. Then, you will pour the batter into an oven safe dish, add the chocolate chips, bake the oat mixture at high heat, and add any additional desired toppings. Lastly, you will dig in and enjoy!

Peanut Butter Chocolate Chip Baked Oats – Ingredients

  • Oats – The first ingredient you will need for this baked oats recipe is, of course, the oats. I used quick cooking oats. If you want this recipe to be made gluten free, choose your favorite gluten free oats.
  • Peanut Flour (Powdered Peanut Butter) – The peanut flour is the second key ingredient you need for this recipe. It adds peanut butter flavor as well as a ton of protein. I used organic PBFit.
  • Creamy Peanut Butter – The creamy peanut butter is another essential ingredient you will need for this recipe. It adds healthy fat, flavor, and richness. We will be baking some into the oatmeal and adding more on top for extra peanut butter flavor.
  • Dark Chocolate Chips – The dark chocolate chips add sweetness and chocolate decadence to this recipe. We will be adding them to the top of the oatmeal batter before baking it so that the chocolate gets nice and melted.
  • Baking Powder – The baking powder acts as the leavening agent for this recipe. The baking powder is key to ensure that the baked oatmeal cake achieves a nice and fluffy texture.
  • Water – The water acts as the source of liquid for this recipe. It turns the base ingredients into an oatmeal cake batter that can be baked in the oven to achieve the perfect peanut butter chocolate chip baked oatmeal cake.
  • Pure Maple Syrup – The pure maple syrup is added to the batter for sweetness. It can also be used as an additional topping after you bake your oatmeal if you want it extra sweet. You can adjust this ingredient to your own personal taste.
