There will also be a few other ingredients that will be used as toppings.

This has literally been one of my go-to pancake recipes for years because it is so quick and easy to make and it is also super budget friendly. I don’t know about you guys, but I love easy, cheap recipes. My mornings are typically pretty busy and packed with work, so I often need something quick and easy. However, even on the weekends, I sometimes don’t feel like making a super fancy breakfast, and on those days I love to make my classic banana pancakes.

  • Baking Powder – The baking powder acts as the key leavening agent for this recipe. It is an essential ingredient that you definitely do not want to forget.
  • Ground Cinnamon – The ground cinnamon adds a nice little extra spice to these strawberry banana pancakes.
  • Nut Milk – The nut milk acts as the main source of liquid to transform the base ingredients into a pancake batter. I used unsweetened vanilla almond milk, but you can use whichever nut milk you prefer.

  • 1/2 cup quick oats
  • 1/2 medium ripe or overripe banana
  • 1/4 tsp baking powder
  • a few dashes ground cinnamon
  • 7 – 8 tbsp nut milk (more as necessary to achieve desired pancake batter consistency)
  • 2 – 3 medium chopped strawberries (for topping)
  • 1 tbsp creamy peanut butter (for topping)
  • pure maple syrup to taste (optional, for topping)

Instructions
 

  • Add the oats, banana, cinnamon, baking powder, and nut milk to a high speed blender or food processor.
  • Blend for a few minutes until a smooth pancake batter consistency is achieved.
  • Pour dollops of batter onto a greased pan or pancake griddle on low-medium heat.
  • Cook the pancakes for a few minutes on each side until golden brown. You will know the pancakes are ready to flip when they start to bubble.
  • Plate your pancakes and top them with chopped strawberries, fresh banana slices, and creamy peanut butter.
