ripe or overripe banana

baking powder

ground cinnamon

(more as necessary to achieve desired pancake batter consistency)

pure maple syrup to taste

Instructions
Add the oats, banana, cinnamon, baking powder, and nut milk to a high speed blender or food processor.
Blend for a few minutes until a smooth pancake batter consistency is achieved.
Pour dollops of batter onto a greased pan or pancake griddle on low-medium heat.
Cook the pancakes for a few minutes on each side until golden brown. You will know the pancakes are ready to flip when they start to bubble.
Plate your pancakes and top them with chopped strawberries, fresh banana slices, and creamy peanut butter.
Drizzle on pure maple syrup to taste if desired.
