Good morning friends! Today I am sharing a sweet and delicious oatmeal recipe that can be eaten for breakfast, dessert, or even enjoyed as a snack. It is banana pudding protein oatmeal. This oatmeal variation is actually quite similar to the vanilla blueberry oatmeal recipe I posted recently, as it has the same base ingredients.

However, the overall flavor profile is completely different, so I had to share this recipe as well. Both are unique in their own way. But, I have to say that I especially love the banana pudding flavor this oatmeal recipe has.

The protein powder used in this recipe makes the oatmeal base thick and creamy. It also provides a delicious vanilla flavor. It combines perfectly with the quick oats to form a solid base. This oatmeal recipe is also vegan and dairy free (of course!). It can be made gluten free as well by using your favorite gluten free oats.

This oatmeal recipe gets its name from the creamy banana “pudding” texture and sweet vanilla-banana flavor combination.


How Would You Describe Banana Pudding?

If you aren’t familiar with banana pudding, it is traditionally a layered dessert containing vanilla custard, vanilla wafer cookies, and sliced bananas. It is usually topped with whipped cream as well, and it is typically served chilled.

The protein powder in this recipe is vanilla flavored, and when combined with the fresh banana slices and vegan whipped cream, it is very reminiscent of the key flavors present in banana pudding. Obviously, it isn’t an exact match. However, it is still insanely tasty. Plus, it is packed with protein, which makes it the perfect healthy snack or dessert. When I eat this for breakfast, I like to add a scoop of peanut butter as well 🙂

Vegan Banana Pudding Protein Oatmeal – Ingredients

  • Quick Oats – The quick oats serve as the base for this oatmeal recipe. For a gluten free base, use your favorite gluten free oats.
  • Vegan Vanilla Protein Powder – The vanilla protein powder adds that classic vanilla flavor that is very prominent is banana pudding. You can use whichever brand you like best. I used the Orgain Simple vegan protein powder in the creamy vanilla flavor. I purchased it at Costco, but I believe you can also get it on the Orgain website or on Amazon (I will have the Amazon link below in the “things you might want for this recipe” section).
  • Ripe Banana – The banana is absolutely essential for this recipe. You want to make sure it is ripe for optimal sweetness. You definitely can’t have banana pudding oatmeal without the banana 🙂
  • Water – The water combines with the oats and protein powder to create a delicious and creamy texture. You can’t cook your oats without a source of liquid, so this ingredient is quite important.
  • Pure Maple Syrup – The pure maple syrup adds extra sweetness to this recipe. You will adjust this to your own taste after cooking the oatmeal.
  • Vegan Whipped Cream – I used canned coconut whipped cream for this recipe. Traditional banana pudding is often topped with whipped cream, so I highly recommend you add some on top of your oatmeal after cooking it.
  • Creamy Peanut Butter (Optional) – The creamy peanut butter is an optional topping that I typically add when I eat this oatmeal recipe for breakfast. It serves as a fat source which helps keep me full for longer. I personally really like the combination of vanilla, banana, and nut butter. This ingredient is of course optional, and it isn’t really found in traditional banana pudding. If you want a dessert style oatmeal that is more reminiscent of true banana pudding, I would not recommend adding nut butter. Instead, stick with just banana slices, pure maple syrup, and vegan whipped cream as toppings.

Ingredients
  

  • 1/2 cup quick oats
  • 1 1/2 tbsp vegan vanilla protein powder (I used Orgain simple creamy vanilla protein powder)
  • 1/2 medium ripe banana (thinly sliced)
  • 1/2 cup + 1 tbsp water
  • pure maple syrup to taste
  • vegan whipped cream (for topping)

Instructions
 

  • Add the oats, protein powder, and 1/2 cup of water to a microwave safe bowl.
  • Mix all ingredients well to combine.
  • Gently mix in the sliced ripe banana.
  • Microwave the oatmeal for 60 seconds.
  • Add in the other tablespoon of water (more as desired for a thinner consistency) as well as pure maple syrup to taste, and mix well to combine.
  • Transfer the oatmeal to a serving dish.
  • Top it off with more banana slices and vegan whipped cream.
