Good morning friends! I hope your day is off to a great start. I woke up early today and my apartment was absolutely freezing, so I knew it was going to be a chilly morning. I went outside for an early morning walk, and I could feel the crisp fall air and see the beautiful array of colorful leaves lining the sidewalks. It was just a beautiful reminder of how much I love the fall season.

Of course, whenever I get back from a chilly fall morning walk or run, I absolutely have to warm up with a creamy, cozy, warm breakfast. Today, I opted for one of my go-to recipes – apple cinnamon oatmeal. This recipe can be made insanely fast in the microwave (we are talking 60 seconds). Or, you could opt for the slower stovetop cooking method. I am going to go through the microwave method with you guys since I know many of you lead super busy lives just like I do.

This recipe is incredibly easy, tasty, and simple to make. It is also especially budget friendly in the fall since apples are in season and tend to be priced a lot cheaper during the fall months. I know you guys are eager to jump right into the recipe, so let’s go through some things to note for this recipe as well as the ingredients you will need to make this recipe a smashing success.


How To Cook Oatmeal In The Microwave Perfectly

The first point I wanted to briefly discuss is how to perfectly cook oatmeal in the microwave. While it may seem like a simple concept, some people are not used to cooking oats in the microwave. Or, they have tried doing so and didn’t end up with a consistency they liked. So, I wanted to quickly give a few tips and tricks that have worked for me.

First off, if you choose to use quick cooking oats, they will likely be ready in about 60 – 90 seconds. If you prefer rolled oats, they typically take two or three minutes to cook.

Next, you have to figure out which consistency you enjoy most. If you like your oats super thick, use less water. If you like them a bit thinner, use more water.

I like to use about 1/2 cup + 2 tbsp water for every 1/2 cup of quick cooking oats. They come out pretty thick, and then I just add a splash of almond milk to make them a bit creamier.

The top takeaway is to start with a bit less liquid because you can always add more. It really comes down to trial and error and what your personal preference is when it comes to the texture of the oatmeal.   • Fresh Apple – The fresh apple is the star of this recipe. You can use whichever kind you like best. I used a gala apple for this recipe, but I have also used honeycrisp and pink lady apples before. The recipe came out delicious with all of these apple varieties.
  • Cinnamon – The cinnamon adds a nice spice to this recipe. It really enhances the flavor and blends well with the apple.
  • Water – The next ingredient you need for this recipe is the main source of liquid, which is water.
  • Creamy Peanut Butter – The creamy peanut butter adds a ton of flavor and a source of healthy fat to this recipe. It also adds a bit of protein. Almond butter would also work here. If you are allergic to nuts, you can swap this ingredient out for your favorite allergy friendly sub.
  • Nut Milk – The nut milk adds creaminess to this oatmeal recipe. I used unsweetened vanilla almond milk in mine. A splash is all you need.

Ingredients
  

  • 1/2 cup rolled or quick cooking oats
  • 1 fresh apple (I used a gala apple)
  • 1/8 tsp cinnamon
  • 1/2 cup + 2 tbsp water
  • 1 tbsp creamy nut butter (I used peanut butter)
  • splash of nut milk (I used unsweetened vanilla almond milk)
  • pure maple syrup to taste (for topping)

Instructions
 

  • Finely chop the fresh apple.
  • Add the oats, water, and half of the chopped apple to a microwave safe dish.
  • Microwave for 60 seconds.
  • Add the cinnamon and a splash of almond milk.
  • Mix to combine thoroughly.
  • Top the oats with the rest of the chopped apple, the nut butter, and a drizzle of pure maple syrup.
