Good morning friends! Today, I am so excited to share my delicious, sweet, and easy breakfast recipe with all of you. Best of all, it cooks in the microwave in about 90 seconds. Today, we will be making s’mores oatmeal. This recipe is packed with chocolate chips and vegan mini marshmallows for a classic s’mores taste.
Not only does this oatmeal contain all plant based ingredients, but it also has a ton of flavor and sweetness. It is the perfect little dessert to end your night with.
As long as you can locate some vegan marshmallows at your local grocery store, this recipe will be incredibly easy to make. Marshmallows are not inherently vegan, as most contain gelatin. However, there are some marshmallows that are plant based and made without gelatin. I found my mini marshmallows at Trader Joe’s, so you can always look there. If you can’t find them there, you can also try Whole Foods, as I have purchased some from there also.
Now that I have talked a bit about where to find vegan marshmallows, let’s go ahead and dive into some quick things to note for this recipe. We will also go through the list of ingredients you will need to make this recipe a smashing success.
How To Cook Your S’mores Oatmeal in the Microwave
As you guys probably know, marshmallows tend to puff up in the microwave. The vegan marshmallows I used are no exception. However, we do not want a marshmallow explosion to occur. The last thing anyone needs is marshmallow fluff to end up all over their microwave.
I was able to avoid a marshmallow mess by microwaving the oatmeal in three intervals. First, I microwaved the oats with the water and mashed banana for about 45 seconds. This allowed the oatmeal to cook partially. Then, I added my chocolate chips and mini marshmallows to the oatmeal mixture. Finally, I cooked the oatmeal for another 45 seconds, and it came out perfect. The marshmallows and chocolate were nice and gooey/melted, but they didn’t burn or explode in the microwave.
I definitely recommend that you use a similar approach. Plus, if you overcook the marshmallows, they could end up hard and chewy. Adding them to your oatmeal halfway through the microwaving process will help prevent them from getting overcooked. - Quick Cooking Oats – The first ingredient you will need for this delicious s’mores microwave oatmeal recipe are the quick cooking oats. This ingredient serves as the main base for the s’mores oatmeal. If you would like to make this recipe gluten free, use your favorite gluten free oats.
- Ripe Mashed Banana – The ripe or overripe banana adds natural sweetness, flavor, and nutrients to the base of this s’mores oatmeal. You will want to use a ripe or overripe banana for optimal sweetness and flavor (greener bananas are much less sweet). You will want to mash the banana up thoroughly before adding it to the oatmeal base.
- Water – The water acts as the source of liquid to cook the oats in. You will want to use quite a bit of water so that the oatmeal doesn’t turn out too thick.
- Vegan Mini Marshmallows – The vegan mini marshmallows are an essential part of this recipe. After all, you can’t have a classic s’mores flavor without two key ingredients – marshmallows and chocolate. As I mentioned above, vegan mini marshmallows can be a bit tough to find. The only two places I’ve been able to purchase them from in stores are Trader Joe’s and Whole Foods, so I definitely recommend that you check those two grocery stores.
- Vegan Semi-Sweet Chocolate Chips – This ingredient adds sweetness and rich chocolate flavor to the oatmeal. You can easily substitute in dark chocolate chips for the semi-sweet chips if you would prefer a dark chocolate flavor.

Vegan S’mores Microwave Oatmeal Recipe
Ingredients
- 1/2 cup quick cooking oats
- 1/2 medium ripe banana (mashed)
- 1 1/2 tbsp vegan mini marshmallows
- 1/2 tbsp semi-sweet chocolate chips
- 1/2 cup + 2 tbsp water
Instructions
- Add the oats, water, and mashed banana to a microwave safe dish.
- Mix well to combine.
- Microwave the mixture for 45 seconds.
- Top the partially cooked oatmeal with the chocolate chips and marshmallows.
- Microwave the oatmeal for another 35 – 45 seconds.
- Let cool for a bit, then dig in and enjoy!
