Easy Vegan Lasagna Soup Recipe

Good morning everyone! Recently, I’ve been craving warm, comforting meals since winter is in full swing and they days have been quite chilly. I have still been running outside as often as I can. However, the really cold days are certainly harder to get motivated to get out the door for. It certainly helps to know that I have a fresh, hot meal waiting for me upon my return. On work days, I typically exercise early in the morning. Once I get back, I like to make microwave oatmeal for breakfast. However, on the weekends, I like to sleep in and start my mornings slow. I typically run a bit later, so I’ll eat breakfast before my mid-morning run. Once I return from my run, I’ll make (or re-heat) my lunch.

Lately, I’ve been making a ton of different vegan soups, one of which I will be sharing with all of you today. Today’s recipe is vegan lasagna soup. It is a super warm, cozy, and flavorful soup recipe packed with flavor and nutrients. I am so excited to share it with all of you today. Now, let’s go through the list of ingredients you will need to make this vegan lasagna soup recipe a smashing success.


Easy Vegan Lasagna Soup – Ingredients

  • Lasagna Noodles – The lasagna noodles are the first essential ingredient you will need for this recipe. This ingredient should come as no surprise. After all, this soup has lasagna in the name. I used some brown rice lasagna noodles, but you can use whichever kind you have on hand or like best. You will be breaking the lasagna noodles into smaller pieces before adding them into the soup mixture.
  • Fresh Spinach – The spinach is another key ingredient used in this vegan lasagna soup recipe. Spinach is great to add to soups and stews because it shrinks down immensely and adds a ton of nutrients to the meal. If you’d like, you can chop it up into smaller pieces before adding it to the soup mixture.
  • Chickpeas – The chickpeas add some plant-based carbs and protein to this recipe. You will want to use canned chickpeas that you’ve drained and rinsed thoroughly (or dry chickpeas that you have already cooked). Chickpeas are one of my favorite kinds of beans, so they are the perfect addition to this vegan lasagna soup.
  • Yellow Onion – The yellow onion adds a ton of flavor to this recipe. I love using a variety of vegetables in my vegan soup recipes, and this one is no exception.
  • Zucchini – Zucchini is another essential ingredient used in this recipe. It is one of my all-time favorite vegetables, so I had to include it in my vegan lasagna soup.
  • Fresh Garlic – The fresh garlic adds a ton of flavor to this vegan soup. You will want to mince it into small pieces so that you get delicious garlic flavor in every single bite.
  • Nutritional Yeast Seasoning – The nutritional yeast seasoning adds some vitamin B12 as well as a subtle nutty/cheesy flavor to this dish.
  • Basil – The basil is the first key spice which adds a ton of flavor to this soup.
  • Oregano – The oregano adds even more spice to the soup. It pair amazingly well with the tomatoes and other vegetables present in this recipe.
  • Vegetable Broth – The vegetable broth serves as the main source of liquid for this soup recipe. It adds flavor to the base of the soup, and it combines perfectly with the other flavors present in this recipe.
  • Diced Tomatoes – This ingredient adds a ton of flavor as well as some more liquid to the base of the soup. I highly recommend that you use fire roasted diced tomatoes as opposed to regular diced tomatoes for even more depth of flavor. The diced tomatoes are the perfect ingredient to finish this soup off with.

Ingredients
  

  • 5 sheets lasagna noodles (I used brown rice noodles)
  • 1 cup fresh spinach
  • 1/2 cup chickpeas (drained and rinsed)
  • 1/2 cup yellow onion (finely chopped)
  • 1/2 cup zucchini (finely chopped)
  • 2 cloves minced garlic
  • 1/2 tbsp nutritional yeast
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 2 cups vegetable broth
  • 1 cup fire roasted diced tomatoes

Instructions
 

  • Add all ingredients, except the lasagna noodles, to a large pot.

  • Mix everything together to combine thoroughly.
  • Bring the soup mixture to a boil on the stovetop.
  • Break up the sheets of lasagna noodles into smaller pieces.

  • Add the lasagna noodles into the soup and mix well to combine.
  • Boil the soup for about 10 more minutes until the noodles are soft, stirring occasionally.
  • Remove the soup from heat and let it cool for a bit.

  • Add optional toppings such as vegan cheese (I added vegan cheddar cheese shreds).
