Cinnamon Roll Pancake Batter
- 1 cup quick oats (blended into a fine oat flour)
- 1/2 tsp baking powder
- 1/4 tsp cinnamon
- 1/4 cup + 3 tbsp nut milk (I used unsweetened vanilla almond milk)
- 1/4 cup unsweetened applesauce
Maple Cinnamon Butter
- 1 tbsp creamy almond butter
- 1 tsp pure maple syrup
- 1/2 tsp cinnamon
- 1/4 tsp nut milk (I used unsweetened vanilla almond milk)
Add the oat flour, baking powder, and cinnamon to a mixing bowl.
Mix all dry ingredients thoroughly.
Mix in the nut milk and applesauce.
In a small bowl, combine the almond butter, pure maple syrup, cinnamon, and nut milk to form the maple cinnamon butter.
Pour dollops of pancake batter onto a greased pan or pancake griddle over low heat.
Cook the pancakes for a few minutes on each side until firm.
Plate your pancakes and spread some of the maple cinnamon butter on top of each one.
Drizzle more almond butter and pure maple syrup on top of your pancakes.
