Pumpkin Oatmeal Chocolate Chip Cookies Recipe

Good morning everyone! Today I am sharing a simple, vegan, and gluten free friendly pumpkin chocolate chip oatmeal cookie recipe. I know you all will absolutely love it 🙂 This recipe requires less than ten ingredients so it is super quick and easy to make.

Now, let’s go ahead and dive into some quick things to note for this recipe. Then, we will look at the list of ingredients you will need to make this pumpkin oatmeal chocolate chip cookies recipe a smashing success.

How To Make Vegan Pumpkin Chocolate Chip Cookies

You can make vegan pumpkin chocolate chip cookies quite easily by following my simple recipe and series of steps. Let’s discuss them briefly. First, you will start by adding all your dry ingredients to a bowl. Then, mix everything to combine thoroughly.

After that, you will want to make a well in the center of your dry mixture and add in your liquid ingredients. Mix everything until you get a nice and smooth cookie dough. Then, gently fold in your chocolate chips. Following that, you will want to scoop equal sized balls of dough onto a lined or greased baking sheet. Then, press them down to form round cookie shapes. Bake the cookies in the oven until firm and golden brown, then dig in and enjoy your tasty cookies! I love to serve mine up with a glass of almond milk.

As you can tell, the steps to making these vegan pumpkin chocolate chip oatmeal cookies are quite simple. If you want these cookies to be gluten free, you will need to use your favorite gluten free oats. Now that we have covered some basics, let’s take a look at the ingredients you will need to make this recipe a smashing success.

Pumpkin Oatmeal Chocolate Chip Cookies – Ingredients

  • Oat Flour – The first ingredient you will need for this recipe is the oat flour. You can easily make your own by blending up rolled or quick cook oats in a high speed blender or food processor for a few seconds. If you want this recipe to be gluten free, make sure to use your favorite gluten free oats.
  • Vegan Mini Semi-Sweet Chocolate Chips Another key ingredient you need for this recipe is the chocolate. For this recipe, I chose to use mini semi-sweet chocolate chips. They add that perfect amount of sweetness and chocolate flavor to the cookies. You will want to gently fold them into your cookie dough. You can also save a few to top your cookies off with before you pop them in the oven to bake.
  • Pumpkin Pie Spice – The pumpkin pie spice adds a ton of pumpkin flavor to this recipe. It is an essential ingredient that you definitely do not want to omit.
  • Cinnamon – The cinnamon adds even more spice to these cookies. When combined with the pumpkin pie spice, you get the perfect fall flavor profile.
  • Baking Soda – The baking soda acts as the leavening agent for these cookies. A little bit goes a long way. Still, it is a necessary ingredient that you definitely do not want to omit.
  • Almond Butter – The almond butter acts as a binding agent for this recipe. It also adds some richness and moisture to the cookies. Make sure to use a creamy, natural almond butter, as it has a much more drizzly consistency that is easy to stir into the cookie dough. If you don’t like almond butter, you could use another nut or seed butter that you prefer.
  • Canned Pumpkin – The next ingredient you will need for this recipe is, of course, canned pumpkin. This ingredient adds a ton of moisture and some pumpkin flavor to the cookies. It is one of the most crucial ingredients for this recipe.
  • Pure Maple Syrup – The pure maple syrup adds a ton of sweetness and moisture to this recipe. It is the final ingredient that perfectly completes the oatmeal pumpkin chocolate chip cookie dough.
