Gently press as much water as possible out of your block of tofu.
Slice the tofu lengthwise into two thick, equally sized pieces.
Fry the tofu on a pan with a bit of olive oil over low-medium heat for a few minutes on each side, until the tofu is golden brown.
Mash the avocado thoroughly and place it in a small mixing bowl.
Mix the spices in with the mashed avocado mixture until well combined.
Toast your bread of choice for a few minutes until golden brown.
Distribute the avocado mixture evenly between your two pieces of toast.
Top each piece of toast with one slice of tofu.
Add the greens on top of one side of the toast.
Place one piece of toast on top of the other to form a sandwich (or eat it open-faced like I did).
Dig in and enjoy!
