Good morning everyone! I am so excited to share a brand new waffle recipe with all of you today. This vegan vanilla protein waffle recipe is made with just a few simple ingredients. It is sweet, delicious, moist, and fluffy. These protein waffles taste especially delicious topped with berries, nut butter, and pure maple syrup. My favorite fruit to pair with these pancakes is either strawberries or blueberries. The vanilla and berry flavors pair really nicely together. The protein powder also adds a boost of protein to the recipe.

As long as you have some sort of waffle iron, you will be able to make a nice stack of fluffy waffles to enjoy for breakfast, brunch, or dessert. If you don’t have a waffle iron, you could try making this recipe into pancakes instead. Now, let’s take a look at some quick things to note for this recipe. I used the Orgain Simple protein powder in the creamy vanilla flavor. I really like the taste of this protein powder, so it’s the one I recommend. You can use whichever brand you prefer or have on hand.
  • Baking Powder – The baking powder acts as the key leavening agent in this recipe to ensure that your protein waffles turn out nice and fluffy. The baking powder is an essential ingredient that you definitely do not want to omit.
  • Fruit (Fresh or Frozen) – The fruit serves as a key topping for this protein waffles recipe. Some of my favorites include sliced strawberries/bananas or frozen blueberries, which I like to heat in the microwave.
  • Nut Milk – The nut milk is the source of liquid used in this vanilla protein waffles recipe. It adds creaminess to your waffle batter. I used unsweetened vanilla almond milk, but you can use whichever kind you prefer or have on hand.

Ingredients
  

  • 1/2 cup quick oats (blended into a fine oat flour)
  • 2 tbsp vegan vanilla protein powder (I used Orgain Simple in the creamy vanilla flavor)
  • 1/4 tsp baking powder
  • 1/4 cup + 2 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 2 tbsp unsweetened applesauce
  • 1 tbsp creamy peanut butter
  • fruit of choice (for topping, I used frozen blueberries)
  • pure maple syrup to taste

Instructions
 

  • In a mixing bowl, combine the oat flour, vanilla protein powder, and baking powder.
  • Mix in the nut milk and applesauce to form a smooth waffle batter.
  • Preheat and grease your waffle iron.
  • Fill the waffle iron with batter and close the lid.
  • Cook your waffle for about five minutes, or until golden brown.
  • Pull your waffle out of the iron and continue making waffles until all the batter has been used up.
