Good morning everyone! Today I am sharing yet another baked oatmeal recipe with all of you. I know that I have been posting a ton of oatmeal recipes lately, but they are just so good! I have been testing out a new flavor almost every single morning, and I plan to share all of my successes on the blog. That way, all of you can enjoy them too :). However, I will also try to switch things up more in the coming weeks so that you aren’t only getting oatmeal recipes.
Ok, enough on that. Let’s go ahead and talk about today’s recipe – birthday cake baked oatmeal. This recipe is the perfect single serve dessert. It is packed with plant based protein and the batter comes together in just a few minutes. The oatmeal turns out nice and soft on the inside, which gives it an incredible cakey texture. The rainbow sprinkles on top add both sweetness and color.

How To Tell If Baked Oatmeal Is Done

- Rainbow Sprinkles – You certainly can’t have birthday cake baked oatmeal without the rainbow sprinkles. I used some flat, round ones, but you can use whichever kind you have on hand.
- Baking Powder – The next ingredient you will want for this recipe is the baking powder. The baking powder serves as the key leavening agent for the oatmeal, so you definitely don’t want to omit it.
- Nut Milk – You will also need a source of liquid for this oatmeal recipe. I used unsweetened vanilla almond milk, but you can use whichever nut milk you have on hand or enjoy most. The nut milk adds creaminess to this birthday cake baked oatmeal recipe.
- Unsweetened Applesauce – The unsweetened applesauce adds both moisture and natural sweetness to this birthday cake baked oatmeal recipe. It is the perfect addition, and an ingredient you definitely don’t want to omit. You might be able to sub mashed banana, although I have not tried it.

Vegan Birthday Cake Baked Protein Oats
Ingredients
- 1/3 cup rolled oats (blended into an oat flour)
- 2 tbsp vegan vanilla protein powder (I used Orgain Simple in the creamy vanilla flavor)
- 1/2 tsp rainbow sprinkles
- 1/4 tsp baking powder
- 1/4 cup + 1 tbsp nut milk (I used unsweetened vanilla almond milk)
- 1 tbsp unsweetened applesauce
- 1/2 tsp pure maple syrup
- vegan whipped cream (for topping)
Instructions
- Preheat your oven to 350° F.
- In a mixing bowl, combine the oat flour, protein powder, and baking powder.
- Add the nut milk, applesauce, and pure maple syrup, then mix again.
- Pour the oatmeal batter into an oven safe dish or ramekin.
- Add the rainbow sprinkles on top of your batter.
- Bake the oatmeal for about 20 minutes, or until your desired consistency is achieved.
- Let the oatmeal cool, then top it with some vegan whipped cream.
- Dig in and enjoy!
