Easy, vegan birthday cake baked oats packed with protein.

Ingredients
  

  • 1/3 cup rolled oats (blended into an oat flour)
  • 2 tbsp vegan vanilla protein powder (I used Orgain Simple in the creamy vanilla flavor)
  • 1/2 tsp rainbow sprinkles
  • 1/4 tsp baking powder
  • 1/4 cup + 1 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 1 tbsp unsweetened applesauce
  • 1/2 tsp pure maple syrup
  • vegan whipped cream (for topping)

Instructions
 

  • Preheat your oven to 350° F.
  • In a mixing bowl, combine the oat flour, protein powder, and baking powder.
  • Add the nut milk, applesauce, and pure maple syrup, then mix again.
  • Pour the oatmeal batter into an oven safe dish or ramekin.
  • Add the rainbow sprinkles on top of your batter.

  • Bake the oatmeal for about 20 minutes, or until your desired consistency is achieved.
