Good morning everyone! I can’t even begin to explain how excited I am to share today’s easy breakfast recipe with all of you. It is super creamy, delicious, and it tastes like you are eating dessert for breakfast.

Today’s breakfast recipe is peanut butter chocolate chip protein oatmeal. It is sweet, creamy, and very easy to make. It requires less than ten simple ingredients, and it cooks in the microwave in just one minute.

I personally have always loved the combination of peanut butter and chocolate. So, I am constantly trying to find more ways to incorporate the flavor combination into my meals. Honestly, this recipe surpassed even my own expectations. I couldn’t believe how delicious, creamy, and flavorful it turned out. Since creating this recipe last week, I have already had it for breakfast a couple of times. I can tell that this is going to be one of those recipes that I keep circling back to.

This oatmeal recipe is also great for busy workdays because it comes together very quickly. Recently, I have been getting up really early (between 5:00 and 6:00 AM) to start my blog work. I make my coffee, do about an hour of computer work, make and eat a quick breakfast, then head out the door for my morning run. I have been loving getting my workout finished early in the morning lately, so that is the schedule I am going to try and stick with for now.

Anyways, let’s go ahead and jump right into the list of ingredients you will need to make this incredibly delicious and satisfying peanut butter chocolate chip protein oatmeal recipe.


Chocolate Chip Protein Oatmeal – Ingredients

  • Quick Oats – For this recipe, I used quick oats that cook in the microwave in just one minute. I have found that they combine best with the protein powder to achieve a super creamy consistency. I typically use quick oats rather than old fashioned rolled oats when I make protein oatmeal.
  • Vegan Chocolate Protein Powder – The chocolate protein powder is the next key ingredient which adds both protein and chocolate flavor to this microwave oatmeal recipe. I used the Orgain Simple protein powder in the chocolate peanut butter cup flavor, and I highly recommend it. It is one of the best vegan protein powders I have found in terms of texture and taste, so it is one of my go to options for protein recipes such as this oatmeal.
  • Powdered Peanut Butter – The powdered peanut butter adds creaminess and peanut butter flavor to the oatmeal, so it is the next ingredient you will need. I used PBFit brand powdered peanut butter.
  • Creamy Peanut Butter – You can’t have peanut butter chocolate chip oatmeal without the peanut butter. This ingredient adds flavor and richness to the oatmeal. It is used as a topping for the protein oats.
  • Water – A source of liquid is an essential ingredient you need for any oatmeal recipe. I typically use either water or nut milk when I make my oatmeal. For this recipe specifically, I decided to use water.
  • Mini Vegan Semi-Sweet Chocolate Chips – The chocolate chips add chocolatey goodness to your oatmeal. I really like the Enjoy Life brand mini semi-sweet chocolate chips. They are the perfect sweet topping for this peanut butter chocolate chip protein oatmeal recipe.
  • Pure Maple Syrup – This is the final ingredient which you will add to taste for additional sweetness.

Ingredients
  

  • 1/3 cup quick oats
  • 1/2 tbsp chocolate protein powder (I used Orgain Simple in the chocolate peanut butter cup flavor)
  • 1/2 tbsp powdered peanut butter (I used PBFit)
  • 1 tbsp creamy peanut butter
  • 1 tsp mini semi-sweet chocolate chips
  • 1/2 cup + 1 – 2 tbsp water
  • pure maple syrup to taste (for topping)

Instructions
 

  • In a microwave safe bowl, mix together the oats, protein powder, and powdered peanut butter.
  • Add 1/2 cup of water and mix again.
  • Microwave the oatmeal for 60 seconds.
  • Slowly add 1 – 2 tbsp of water to achieve your desired consistency.
  • Top your oatmeal with the peanut butter, chocolate chips, and pure maple syrup to taste.
