Good morning everyone! Today, I am so excited to share a quick and simple work day lunch recipe with all of you – a loaded burrito bowl with seasoned fajita veggies. This is a recipe that comes together in minutes and tastes incredibe. It is perfect to meal prep in large batches to enjoy throughout the entire work week.
This recipe is certainly packed with flavor, but it is also budget friendly and super simple to make. It is one of my new favorite lunch options, and I really think you guys are going to love it.

Fajita Vegetable Burrito Bowl
Ingredients
- 1/2 cup black beans (drained and rinsed)
- 1/2 cup cooked brown rice
- 1/4 medium green pepper (thinly sliced)
- 1/4 medium red pepper (thinly sliced)
- 2 tbsp yellow onion (chopped)
- 2 tbsp chopped avocado
- 1 1/2 tbsp salsa
- 1/4 tsp garlic powder
- 1/8 tsp chili powder
- 1/8 tsp cumin
- freshly squeezed lime juice (optional)
- salt to taste
Instructions
- Add the sliced bell peppers, chopped onion, garlic powder, chili powder, and cumin to a pan with a bit of olive oil.
- Cover the vegetables with a lid and cook over low-medium heat until soft (about 15 minutes), stirring occasionally.
- Add the rice, beans, salsa, vegetables, and avocado to a bowl or plate.
- Add salt and fresh lime juice to taste.
- Sprinkle on some vegan cheese shreds or nutritional yeast seasoning if desired.
- Dig in and enjoy!
