Good morning everyone! So apparently I am back on that 5:30 AM grind. I woke up early and ready to get to work this morning. As per usual, I brewed a fresh, hot cup of coffee, and then sat down to write this blog post. There are two things I absolutely can’t start my day without – a fresh cup of coffee and a morning run.

I don’t know about you guys, but I always do my best thinking early in the morning. I like to write my blog posts first thing in the morning on workdays. That way, I can spend my weekends recipe testing, which is my favorite part. At least, that’s the schedule I’ve been on for the past few months.

Anyways, today I am so excited to share my easy hasselback potatoes recipe. This is one of those simple yet delicious recipes that requires minimal prep work. However, it all comes together incredibly well. The potatoes turn out crispy on the outside and soft on the inside. You can load them up with corn, vegan sour cream, vegan cheese, or even dip them in hummus or ketchup. This recipe is the perfect easy dish to whip up in a pinch.

Now, let’s go over a few quick things to note for this recipe. Then, we will get into the list of ingredients you will need to make these crispy hasselback potatoes a smashing success!


What Do You Serve With Hasselback Potatoes?

The possibilites regarding what you can serve with hasselback potatoes are truly endless. Potatoes are one of my favorite foods, so I have tried many different combinations before.

As for veggies, a few of my favorite ones to serve with potatoes include peas and corn. Other great toppings for hasselback potatoes include fresh herbs, hummus or avocado, vegan sour cream, vegan cheese, and the list goes on.

When I just want a quick snack, I like to slice through the potato accordion to get thin, soft slices to dip in ketchup. It’s almost like a soft baked fry, and it’s a delicious combo that you must try! Some people even like to eat their potatoes with mustard.

Another option is to throw the potato into a salad with other delicious add-ins such as veggies, tofu, youru favorite dressing, nuts/seeds, etc. I love a good salad / nourish bowl with potato or sweet potato.

Basically, you can serve your potatoes with so many different ingredients. My best tip is to try out different combinations and see what you like best. Now that we’ve went over a few quick things to note, let’s dive into the list of ingredients you will need to make these hasselback potatoes.


Crispy Easy Loaded Hasselback Potatoes – Ingredients

  • Russet Potatoes – The first ingredient you will need for this recipe is, of course, the russet potatoes. This ingredient is pretty obvious, but it’s essential nonetheless.
  • Extra Virgin Olive Oil – This ingredient adds a ton of flavor to the potatoes. It also helps them get nice and crispy on the outside.
  • Dried Prsley – The parsley adds a bit of color and some flavor to this hasselback potatoes recipe.
  • Nutritional Yeast Seasoning – The nutritional yeast seasoning adds a slight nutty/cheesy flavor to this recipe. It is also a source of vitamin B12. It is absolutely delicious in savory vegan recipes, and this one is no exception.
  • Salt + Pepper – The salt and pepper are two essential seasonings for most savory recipes, especially potatoes. You will add these two ingredients to taste.
  • Vegan Cheese Shreds – This ingredient is optional, but in my opinion, it really elevates the dish. A sprinkle of vegan cheese shreds adds some additional flavor and texture to the hasselback potatoes, so I highly recommend it.

Ingredients
  

  • 3 large russet potatoes
  • 1/4 tsp dried parsley
  • 1/4 tsp nutritional yeast seasoning
  • salt to taste (I used Himalayan pink salt)
  • pepper to taste
  • vegan cheddar cheese shreds (optional, for topping)
  • 1/2 tbsp extra virgin olive oil

Instructions
 

  • Preheat the oven to 450° F.
  • Thinly slice your potatoes 3/4 of the way through, leaving the very bottom of your potatoes unsliced.
  • Whisk together the olive oil, dried parsley, salt, and pepper.

  • Brush the oil over the exterior and inside the crevices of the potatoes.

  • Sprinkle the nutritional yeast seasoning on top of the potatoes.
  • Place the potatoes on a lined or greased baking sheet and bake until crispy on the outside and soft on the inside, about 35 – 40 minutes.

  • Sprinkle on the optional vegan cheddar cheese shreds, then bake for a few more minutes until the cheese is melted.
