Good morning everyone! As the winter festivities and holidays quickly approach, I thought it would be a great time to start rolling out some holiday cookie recipes. More specifically, I’ll do a vegan take on some of my personal favorites. Today’s cookie is going to be one that I loved as a child – chocolate peanut butter no bake cookies.

This vegan no bake cookie recipe is filled with chocolate and peanut butter goodness. The cookies are sweet, decadent, and flavorful. They are incredibly easy to make, and they are the perfect treat to share with family and friends. They are a huge hit in my family during the holidays, and I know you guys are going to love them just as much as I do.

This recipe requires less than ten simple ingredients, and of course, there is no baking required. Now, let’s take a look at some quick things to note for this recipe. Then, we will dive into the list of ingredients you’ll need to make these delicious chocolate peanut butter no bake cookies.


Is There a Way to Make Cookies Without an Oven?

While most cookies are baked in an oven, chocolate peanut butter no bake cookies are one popular variety that are not made in an oven. This is partially due to the simple ingredients used which do not require any baking. It’s also, in part, due to the fact that no bake cookies are often eaten cold, right from the refrigerator after they have had a chance to chill and set. So, if you’re looking for a cookie recipe that requires no oven or baking of any kind, no bake cookies are perfect for you to whip up.


How Do You Cook No Bake Cookies?

While traditional no bake cookies do require boiling of the cookie dough mixture, my vegan version does not require this step. Instead, we will simply combine all of the ingredients in a large mixing bowl, roll them into spheres, and pop them in the refrigerator for about an hour to chill and set. I find this method to be far less time consuming, and also a lot less messy. And I don’t know about you guys, but my least favorite part about cooking and baking is the clean up process. So, I’ll take any excuse to reduce the mess as I cook or bake.

Chocolate Peanut Butter No Bake Cookies – Ingredients

  • Rolled Oats – The first ingredient you will need for this recipe are the old fashioned rolled oats. The oats serve as the main dry base ingredient used to make these no bake cookies. You can use whichever brand you like best.
  • Chocolate Protein Powder – The next ingredient you will need for this recipe is the vegan chocolate protein powder. I used the Orgain brand protein powder in the creamy chocolate fudge flavor. It is one of my favorite vegan protein powders in terms of overall texture and flavor.
  • Coconut Sugar – The coconut sugar adds extra sweetness to these no bake cookies. It is one of my favorite sweeteners to use in baked goods.
  • Cocoa Powder – The cocoa powder adds rich chocolate flavor to these no bake cookies. A little bit goes a long way. I used the Hershey’s special dark cocoa powder for an even richer dark chocolate flavor.
  • Creamy Peanut Butter – You can’t have no bake cookies without the peanut butter. The peanut butter adds richness, stickiness, and a ton of flavor to this recipe.
  • Pure Maple Syrup – This ingredient adds a source of liquid sweetness to the cookies. It also helps all the ingredients come together due to its sticky texture. It is the perfect sweet addition to this no bake cookie recipe.

Ingredients
  

  • 1/2 cup + 2 tbsp rolled oats
  • 1 tbsp vegan chocolate protein powder (I used Orgain creamy chocolate fudge)
  • 1/2 tbsp coconut sugar
  • 1/2 tsp cocoa powder (I used Hershey's special dark)
  • 3 tbsp creamy peanut butter
  • 1 1/2 tbsp pure maple syrup

Instructions
 

  • In a small mixing bowl, combine the oats, protein powder, coconut sugar, and cocoa powder.
  • Add in the peanut butter and maple syrup and mix again to combine thoroughly.
  • Roll the dough into eight equal sized spheres and place them on a parchment lined dish or baking sheet.
  • Refrigerate the cookies for about an hour, or until chilled and firm.
