Good morning everyone. I hope you all have had an amazing start to your day. I started this morning off with my usual cup of coffee, some recipe drafting, and of course, breakfast!

Today, I decided to switch up my typical bowl of oatmeal for a more festive flavor. This creamy pumpkin pie microwave oatmeal is a recipe I created years ago, and I still love it just as much today. I knew that I needed to share it with you guys because it is way too delicious to keep all to myself.

I simply could not wait a few more months to share this recipe during the fall season, even though pumpkin is most popular during the fall season. While the pumpkin flavor is much different than my typical fruity oatmeal bowls, it is equally tasty.

It has delicious cinnamon and pumpkin spice flavors as well as a touch of maple syrup for that extra sweetness. And while I personally enjoy eating pumpkin pie cold, I prefer this pumpkin pie oatmeal arm and fresh. Once you guys try this recipe, I think you will see why – it is so good when consumed hot and fresh!

Making vegan pumpkin oatmeal is much simpler than you might think! All you need are some quick oats, a few spices, water, canned pumpkin, applesauce, and a few key toppings including peanut butter and pure maple syrup! That’s literally everything.

Then, you just combine everything in a microwave safe dish, cook for 90 seconds, add your toppings, and enjoy! I also like to transfer my oats to another dish before adding the toppings and eating the oatmeal, because I find that the microwaved bowl is super hot. Plus, they cook insanely fast in the microwave. If you want a gluten free oat base, use your favorite brand of gluten free oats.
  • Spices – There are a few key spices you need for this recipe. First up is cinnamon. It is a classic spice that I absolutely love! Next up is the pumpkin pie spice. This give the oatmeal that classic pumpkin spice flavor. These two spices together add tons of pumpkin spice goodness to your oatmeal.
  • Water – The water is used to cook our oatmeal in. It helps transform your mixture into a thick, creamy, and delicious pumpkin pie oatmeal bowl.
  • Canned Pumpkin – The canned pumpkin is essential to give you extra pumpkin flavor. It also gives your bowl of oatmeal a beautiful orange tint. In addition to that, the canned pumpkin adds moisture to the oatmeal recipe.
  • Unsweetened Applesauce – The unsweetened applesauce will add natural sweetness and additional moisture to your oatmeal bowl. It’s a secret little ingredient that I love to cook and bake with.
