This recipe serves as the perfect base for a loaded burrito bowl. It tastes incredible paired with black beans, veggies, salsa, baked tofu, and the list goes on. The lime pairs perfectly with the cilantro and brown rice.
I especially love this cilantro lime brown rice recipe because you can prep a large batch of it and use it in a variety of recipes throughout the week, such as salads, nourish bowls, etc. I also wanted to note that while I did use brown rice for this recipe, you can easily sub white rice if you prefer. Can You Make Cilantro Lime Rice With Brown Rice?
You can absolutely make cilantro lime rice with brown rice instead of white rice. All you have to do is follow the package directions on your brown rice when you cook it to make sure it still turns out nice and fluffy. Once it has finished cooking, you simply add the same ingredients that you would to make cilantro lime white rice. It is as simple as that! Now that we have covered a few quick things to note for this recipe, let’s go through the list of ingredients you will need to make it.
Easy Cilantro Lime Brown Rice – Ingredients
- Brown Rice – The first essential ingredient you will need for this recipe is, of course, the rice. I used Trader Joe’s brand jasmine brown rice for this recipe, but you can use any kind that you have on hand or prefer. If you like white rice better, you can easily use it instead of white rice if desired. Make sure to rinse your rice thoroughly before cooking it for optimal texture and flavor. I also like to add a few dashes of salt to the pot of water before cooking the rice in it. I use Himalayan pink salt because it’s my favorite kind of salt in terms of flavor.
- Water – You can’t cook the rice without a pot of water. The rice has to absorb the water to get super fluffy and delicious.
- Fresh Cilantro – The fresh cilantro adds amazing flavor and texture to this recipe. I love how well this ingredient pairs with the lime juice as well. It also sneaks some extra nutrients into the dish, and it adds a beautiful pop of color as well.
- Salt – The salt is another essential ingredient you will want for your cilantro lime brown rice. It adds a ton of flavor to the rice. You will adjust this ingredient to your own personal taste. I used himalayan pink salt, but you can use whichever kind you prefer or have on hand.
- Fresh Lime Juice – Fresh lime juice is another key ingredient used in this cilantro lime rice recipe. While you could use pre-packaged lime juice, I personally think fresh lime juice tastes much better. It does take a bit of extra time to squeeze the juice yourself, but I think it’s well worth the effort.
- Extra Virgin Olive Oil – The olive oil adds richness and flavor to this cilantro lime brown rice recipe. It also provides a source of fat, which I personally love. I find that healthy fat helps me feel more satiated by my meals. You will be drizzling the olive oil onto the rice after it is done cooking.

Easy Cilantro Lime Brown Rice
Ingredients
- 1 cup jasmine brown rice
- 2 1/4 cup water
- salt (to taste, I used Himalayan pink salt)
- 1/2 cup fresh cilantro (minced)
- 2 tbsp lime juice (freshly squeezed)
- 1 tsp extra virgin olive oil
Instructions
- Thoroughly rinse the brown rice.
- Add the brown rice and water to a pot. Add an optional dash of salt.
- Bring the pot of rice and water to a boil.
- Turn the heat to low and simmer the rice, covered, for about 25 – 30 minutes (until all the water is absorbed and the rice is fluffy).
- Transfer the rice to a large bowl and fluff it up with a fork.
- Gently mix in the cilantro, lime juice, and olive oil.
- Add salt to taste.
- Enjoy your cilantro lime rice fresh and warm with black beans, veggies, avocado, or whatever else you'd like!
