Easy Cilantro Lime Brown Rice

Ingredients
  

  • 1 cup jasmine brown rice
  • 2 1/4 cup water
  • salt (to taste, I used Himalayan pink salt)
  • 1/2 cup fresh cilantro (minced)
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tsp extra virgin olive oil

Instructions
 

  • Thoroughly rinse the brown rice.
  • Add the brown rice and water to a pot. Add an optional dash of salt.
  • Bring the pot of rice and water to a boil.
  • Turn the heat to low and simmer the rice, covered, for about 25 - 30 minutes (until all the water is absorbed and the rice is fluffy).
  • Transfer the rice to a large bowl and fluff it up with a fork.
  • Gently mix in the cilantro, lime juice, and olive oil.
