Easy Cilantro Lime Brown Rice

The easiest flavor packed cilantro lime brown rice recipe.

- 1 cup jasmine brown rice
- 2 1/4 cup water
- salt (to taste, I used Himalayan pink salt)
- 1/2 cup fresh cilantro (minced)
- 2 tbsp lime juice (freshly squeezed)
- 1 tsp extra virgin olive oil
Thoroughly rinse the brown rice.
Add the brown rice and water to a pot. Add an optional dash of salt.
Bring the pot of rice and water to a boil.
Turn the heat to low and simmer the rice, covered, for about 25 - 30 minutes (until all the water is absorbed and the rice is fluffy).
Transfer the rice to a large bowl and fluff it up with a fork.
Gently mix in the cilantro, lime juice, and olive oil.
Add salt to taste.
Enjoy your cilantro lime rice fresh and warm with black beans, veggies, avocado, or whatever else you'd like!
