A few weeks ago, I came up with this apple cinnamon oat pancake recipe, and it definitely does not disappoint. I have tested it a couple of times, made some minor tweaks, and now it is finally ready to share with all of you.
These pancakes are light, fluffy, moist and they have a little bit of natural sweetness thanks to the fresh chopped apple pieces as well as the unsweetened applesauce. These pancakes pair really well with pure maple syrup and nut butter, and I think you guys are going to love them. Vegan Apple Cinnamon Oat Pancakes
Ingredients
- 1/2 cup quick oats (blended into a fine oat flour)
- 1/4 cup finely chopped apple (I used an organic pink lady apple)
- 1/4 tsp baking powder
- 1/8 tsp cinnamon
- 3 1/2 tbsp nut milk (I used unsweetened vanilla almond milk)
- 3 tbsp unsweetened applesauce
- 1 tbsp creamy peanut butter (for topping)
- pure maple syrup to taste
Instructions
- In a large bowl, mix together the oat flour, baking powder, and cinnamon.
- Add the applesauce and nut milk, and mix again.
- Gently fold in the chopped apple pieces.
- Pour dollops of batter onto a greased pan or pancake griddle over low heat.
- Cook the pancakes for a few minutes on each side until golden brown.
- Plate the pancakes.
- Top the pancakes with the peanut butter, more chopped apple pieces, and pure maple syrup to taste.
