Delicious apple cinnamon oatmeal pancakes that are vegan, moist, sweet, and fluffy.

- 1/2 cup quick oats (blended into a fine oat flour)
- 1/4 cup finely chopped apple (I used an organic pink lady apple)
- 1/4 tsp baking powder
- 1/8 tsp cinnamon
- 3 1/2 tbsp nut milk (I used unsweetened vanilla almond milk)
- 3 tbsp unsweetened applesauce
- 1 tbsp creamy peanut butter (for topping)
- pure maple syrup to taste
In a large bowl, mix together the oat flour, baking powder, and cinnamon.
Add the applesauce and nut milk, and mix again.
Gently fold in the chopped apple pieces.
Pour dollops of batter onto a greased pan or pancake griddle over low heat.
Cook the pancakes for a few minutes on each side until golden brown.
Plate the pancakes.
Top the pancakes with the peanut butter, more chopped apple pieces, and pure maple syrup to taste.
Dig in and enjoy your pancakes warm and fresh!
