Delicious apple cinnamon oatmeal pancakes that are vegan, moist, sweet, and fluffy.

Ingredients
  

  • 1/2 cup quick oats (blended into a fine oat flour)
  • 1/4 cup finely chopped apple (I used an organic pink lady apple)
  • 1/4 tsp baking powder
  • 1/8 tsp cinnamon
  • 3 1/2 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 3 tbsp unsweetened applesauce
  • 1 tbsp creamy peanut butter (for topping)
  • pure maple syrup to taste

Instructions
 

  • In a large bowl, mix together the oat flour, baking powder, and cinnamon.
  • Add the applesauce and nut milk, and mix again.
  • Gently fold in the chopped apple pieces.
  • Pour dollops of batter onto a greased pan or pancake griddle over low heat.
  • Cook the pancakes for a few minutes on each side until golden brown.
  • Plate the pancakes.
  • Top the pancakes with the peanut butter, more chopped apple pieces, and pure maple syrup to taste.
