Flourless Vegan Blueberry Protein Pancakes
Good morning everyone! Today I am sharing a simple and delicious recipe for blueberry protein pancakes. This recipe utilizes oats and vegan vanilla protein powder so that the recipe is completely flourless and free of banana.
I don’t know about you guys, but I love switching up my typical bowl of oats for a stack of delicious pancakes, especially on weekends when I have more time to cook and bake. Blueberry pancakes are probably my favorite kind (I like them even better than chocolate chip pancakes). Naturally I had to perfect and share my simple and delicious recipe for blueberry protein pancakes.
I really enjoy the Orgain simple vegan protein powder, and I used the creamy vanilla flavor for this recipe. You should be able to sub another protein powder you enjoy, although I can’t vouch for the flavor and texture.
If you do decide to use another protein powder, make sure to add the liquid slowly. Different protein powders will absorb liquid differently, and you don’t want your pancake batter to turn out way too thin.

Why Do My Protein Pancakes Fall Apart?
A very common question regarding protein pancakes is why they might be falling apart. If your protein pancakes are falling apart, there could be a couple reasons why.
First off, you might be using a poor quality (or old) pan that is making the pancakes stick and difficult to flip. I used my pancake griddle for this recipe, and they flipped over with ease. When I don’t want to pull my pancake griddle out, I use a high quality nonstick pan.
Another reason could be that you are not allowing your pancakes to cook long enough before trying to flip them. I always wait a few minutes until they start to bubble before flipping them. This ensures that they hold together well.
Finally, you might not have the correct ratio of dry mixture to liquid. If your pancake batter is super runny, the pancakes could fall apart. You want to achieve a batter consistency that drips slowly off the spoon. There are a few other reasons why your protein pancakes might fall apart. These are just a few common ones that I have experienced and wanted to share.

Healthy Simple Blueberry Protein Pancakes – Ingredients
- Quick Oats – The quick oats act as one of the key base ingredients for this recipe. They will be blended up to form a “flour”. For gluten free pancakes, use your favorite gluten free oats.
- Vanilla Protein Powder – As I mentioned above, I used the Orgain simple vegan protein powder in the creamy vanilla flavor. I love the taste of Orgain powder, as I find it’s not as “chalky” and artificial tasting as many other protein powders. It also achieves a really nice pancake batter consistency when combined with the oats and other ingredients in this recipe.
- Baking Powder – The baking powder acts as the leavening agent in this recipe to give your pancakes a lighter, fluffier texture. It is an important ingredient that you should not omit.
- Blueberries – I used fresh blueberries for this recipe since I had them on hand. I have used microwaved frozen blueberries to make my blueberry pancakes before, but they do tend to create excess liquid in your batter. If you do choose frozen blueberries, I always recommend microwaving them, and then draining and rinsing them as well to remove as much excess liquid as possible. I will say that fresh blueberries are definitely the best option for this pancake recipe.
- Nut Milk – The nut milk adds creaminess to the recipe and it also transforms the mixture into a pancake batter. I used unsweetened vanilla almond milk for this recipe, but you can use whichever nut milk you have on hand or prefer.
- Creamy Peanut Butter – The creamy peanut butter will be used as a topping for the blueberry pancakes. I simply can’t enjoy pancakes without peanut butter. You can sub another nut/seed butter that you prefer if desired.
- Pure Maple Syrup – The pure maple syrup will be added to taste for additional sweetness.

Flourless Vegan Blueberry Protein Pancakes
Ingredients
- 1/3 cup quick oats
- 2 tbsp vegan vanilla protein powder (I used Orgain Simple creamy vanilla protein powder)
- 1/4 cup fresh blueberries (plus more for topping)
- 1/4 tsp baking powder
- 5 tbsp nut milk (I used unsweetened vanilla almond milk
- 1 tbsp creamy peanut butter (for topping)
- pure maple syrup to taste (for topping)
Instructions
- Blend the oats until a fine oat flour forms, about 20 – 30 seconds
- Combine the oats, vanilla protein powder, and baking powder in a mixing bowl.
- Add the nut milk, and mix again until all ingredients are well combined (don't overmix).
- Gently fold in the fresh blueberries. If using frozen blueberries, microwave, drain, and rinse them thoroughly before adding them to the pancake batter
- Pour dollops of batter onto a greased pan or pancake griddle.
- Cook the pancakes for a few minutes on each side until golden brown. You will know they are ready to flip when they start to bubble.
- Plate your pancakes and add the peanut butter, more fresh blueberries, and pure maple syrup to taste.
- Dig in and enjoy!
