Flourless Vegan Blueberry Protein Pancakes

Quick and easy blueberry protein pancakes that are made with oats and require no banana or flour.

Ingredients
  

  • 1/3 cup quick oats
  • 2 tbsp vegan vanilla protein powder (I used Orgain Simple creamy vanilla protein powder)
  • 1/4 cup fresh blueberries (plus more for topping)
  • 1/4 tsp baking powder
  • 5 tbsp nut milk (I used unsweetened vanilla almond milk
  • 1 tbsp creamy peanut butter (for topping)
  • pure maple syrup to taste (for topping)

Instructions
 

  • Blend the oats until a fine oat flour forms, about 20 - 30 seconds
  • Combine the oats, vanilla protein powder, and baking powder in a mixing bowl.
  • Add the nut milk, and mix again until all ingredients are well combined (don't overmix).
  • Gently fold in the fresh blueberries. If using frozen blueberries, microwave, drain, and rinse them thoroughly before adding them to the pancake batter
  • Pour dollops of batter onto a greased pan or pancake griddle.
  • Cook the pancakes for a few minutes on each side until golden brown. You will know they are ready to flip when they start to bubble.

  • Plate your pancakes and add the peanut butter, more fresh blueberries, and pure maple syrup to taste.
