Good morning friends! Today, I am so excited to share a simple, delicious, and healthy vegan breakfast recipe with all of you – peanut butter and jelly banana oat pancakes.

These pancakes are insanely easy to make, as they require just five key base ingredients. Once you blend up all the base ingredients, you will want to cook your pancakes over low heat on a pan or pancake griddle. After that, you will simply plate your pancakes and add your toppings – the creamy peanut butter, jelly, and pure maple syrup. Finally, you will have delicious, budget friendly, gluten free, and vegan banana oat pancakes that are ready to enjoy.

Overall, this pancake recipe is one of my go-to Saturday morning staples. I love to follow up my weekly long run with a big stack of vegan pancakes, and the peanut butter and jelly flavor combination of this recipe hits the spot every single time.

If you want to make these pancakes gluten free, use your favorite brand of gluten free oats.
  • Ripe or Overripe Banana – The next ingredient you will need for this recipe is the ripe or overripe banana. This ingredient adds sweetness and a ton of moisture to your pancakes. The riper your banana is, the sweeter it will be. So, make sure to use one that is either ripe or overripe. If the peel is yellow with brown spots, it is perfect for this recipe.
  • Baking Soda – This ingredient acts as the key leavening agent for this recipe.

Ingredients
  

Pancakes

  • 1/2 cup old fashioned rolled oats
  • 1/2 medium overripe banana
  • 1/4 tsp baking soda
  • 1/2 cup nut milk (I used unsweetened vanilla almond milk)
  • 1/2 tsp pure vanilla extract

Toppings

  • 2 tbsp blueberry jelly (I used homemade blueberry jam)
  • 1 tbsp creamy peanut butter
  • pure maple syrup to taste

Instructions
 

  • Add the rolled oats, banana, baking soda, nut milk, and pure vanilla extract to a high speed blender.
  • Blend until a smooth consistency is achieved.
  • Pour dollops of batter onto a greased pan or pancake griddle over low heat.
  • Cook the pancakes for a few minutes on each side until golden brown. You'll know they're ready to flip when they start to bubble.
  • Plate the pancakes.
  • Top the pancakes with the creamy peanut butter, blueberry jelly, and pure maple syrup to taste.
