Vegan Peanut Butter Fudge

Good morning friends! Today I’m sharing a vegan fudge recipe. This healthy, easy, vegan peanut butter fudge recipe is one I’m especially excited for. It requires only a few simple ingredients, has no refined sugar, is dairy free, and the taste and texture are perfect. It’s almost a cross between fudge and pudding.

I knew I needed to make my own homemade vegan fudge recipe because I haven’t been able to eat traditional fudge for years since going vegan. Unfortunately, most fudge recipes require dairy and a lot of sugar.

Here’s my history with fudge. When I was younger, my family use to take trips to an amusement park in the summer that was a couple hours from where we lived. Right when we entered the park, the smell of delicious fudge in a variety of flavors wafted through the air.

The fudge shop in the park was placed right near the entrance, and they gave out free samples daily. I have fond memories of running into the store with my sisters to get some samples. But, what I didn’t appreciate was the huge sugar crash afterwards.

I now realize that the fudge was product placement at its finest. They knew that thousands of people would enter the gates and smell that delicious fudge right when they walked in. And who can say no to that tempting treat. Combine that with free samples, and there’s no way you are avoiding the delicious fudge goodness that awaits you.

Things are different today, especially now that I’m vegan. So, today I decided to try my hand at making a healthy vegan fudge. The secret ingredient? Mashed sweet potato. It sounds like a weird base for fudge, but it’s actually delicious.

The texture is perfect, and the taste is amazing too. Plus, it’s a dessert that will give you lots of nutrients. In my opinion, the desserts that taste amazing and are also secretly good for you are the best ones.

Of course, I had to make my favorite flavor – peanut butter. This fudge uses natural ingredients and like I said, has no refined sugar. So, you can eat as much as you would like without fear of bonking an hour later. Let’s review some of the ingredients we are going to be using.


Vegan Peanut Butter Fudge – Ingredients

  • Mashed Sweet Potato – I was lazy today, and I cooked my sweet potato in the microwave. But trust me, it will taste best if you bake the sweet potato in the oven. This allows the sweetness to really come out. Oven baked sweet potatoes are loads better than microwaved ones, so if you have the extra time, I would highly recommend it.
  • Banana – The mashed banana in this recipe adds natural sweetness. This prevents us from having to use a ton of added sugar.
  • Pure Maple Syrup – This adds more sweetness, and helps everything stick together.
  • Unsweetened Vanilla Almond Milk – I used unsweetened. I actually never buy sweetened almond milk. I don’t like the extra sugar, and I don’t feel that almond milk needs any sugar. I drink plain cups of it daily. Am I the only one who does this?
  • Creamy Peanut Butter – You need two peanut flavored ingredients for this recipe. First, you have traditional peanut butter for creaminess and richness.

  • Powdered Peanut Butter – You will need the powdered peanut butter for additional flavor and a large boost of protein. Powdered peanut butter has about three times as much protein as regular peanut butter for the same amount of calories.

Ingredients
  

  • 3/4 cup mashed sweet potato
  • 1 overripe banana (mashed)
  • 1 tbsp unsweetened vanilla almond milk
  • 3 tbsp pure maple syrup
  • 4 1/2 tbsp creamy peanut butter
  • 3 tbsp powdered peanut butter

Instructions
 

  • Add all ingredients to a food processor or high speed blender.
  • Blend thoroughly.
  • Grease a rectangular pan (I used a mini loaf pan), then smooth mixture evenly into the pan.
  • Freeze for an hour or two until the fudge is firm.
  • Let thaw for a bit, cut into squares, then enjoy.

I’d recommend storing any leftovers in the freezer, then thawing for a bit before eating. This will help them keep the fudgy, thick consistency. If you want, you can add a bit more peanut butter to your mixture for a stronger peanut buttery flavor!

You can also switch this recipe up by adding chocolate chips, or you can ditch the peanut butter and make a chocolate fudge recipe if that’s what you prefer.
