Good morning everyone! Today, I am bringing you a recipe for one of my favorite simple no bake treats – dark chocolate peanut butter cups. This recipe requires just three ingredients, no baking, and it comes together in minutes. Also, it is incredibly customizable. You can easily switch out the chocolate filling for your favorite store bought or homemade jam for a peanut butter and jelly cup, which in my opinion, is equally delicious.

Veganizing the classic chocolate peanut butter cup was a top priority for me when I first transitioned to a plant based diet, because peanut butter cups have always been one of my absolute favorite treats.

I remember trick-or-treating with my sisters when I was a kid. We always came home and traded candy, and I loved to exchange my sour candies for creamy chocolate peanut butter cups.

Now, I make my own delicious vegan version of one of my childhood favorites. Let’s take a look at some quick things to note for this recipe. Then, we will dive into the list of ingredients you’ll need to make this peanut butter cup recipe a smashing success!


How Do You Make Healthy Chocolate Peanut Butter Cups?

Making healthy chocolate peanut butter cups is much easier than you might think. You really only need three key ingredients to make my vegan dark chocolate peanut butter cups recipe – melted coconut oil, creamy peanut butter, and dark chocolate in some form (chips, chunks, etc.).

Because I have always been a much bigger fan of peanut butter than chocolate, I like to make “inside out” peanut butter cups, which essentially means that I layer the chocolate between the peanut butter, rather than the other way around. This way, you get a rich peanut butter taste in every single bite, with a nice hint of dark chocolate.

In my opinion, peanut butter cups are one of the easiest classic candies to make, and I love that there is no baking required. Honestly, the most difficult part is having to wait for them to harden in the freezer before enjoying them.


How Do You Make A Dark Chocolate Peanut Butter Cup?

Traditional peanut butter cups use milk chocolate, but I used dark chocolate in mine to make my sweet treat completely vegan. I actually know a lot of people who prefer dark chocolate anyway, so I find that even non-vegans love to make and enjoy a rich and creamy dark chocolate peanut butter cup.

I think my fellow peanut butter lovers will appreciate the high ratio of peanut butter to dark chocolate in this recipe. Regardless, the flavor combination of peanut butter and dark chocolate is one that I find to be quite difficult to top.

Now that we’ve gone over some quick things to note for this recipe, let’s take a look at the list of ingredients you will need to make these vegan dark chocolate peanut butter cups.


Dark Chocolate Peanut Butter Cups – Ingredients

  • Creamy Peanut Butter – The first ingredient you will need for this recipe is the creamy peanut butter. I use a natural peanut butter that has a bit of added salt. I find that the saltiness of the peanut butter complements the richness and the sweetness of the chocolate filling very nicely.
  • Dark Chocolate Chips or Chunks – The next ingredient you will need for this recipe is the dark chocolate. You can use whichever kind you prefer. This ingredient will be melted with some coconut oil to use as the peanut butter cup filling.
  • Melted Coconut Oil – This ingredient will be used in both the peanut butter and melted dark chocolate to create a more drizzly consistency. Additionally, it will help the cups harden when you pop them in the freezer to set.

Ingredients
  

Peanut Butter Exterior

  • 1/4 cup + 2 tbsp creamy peanut butter
  • 1 tbsp melted coconut oil (measure after melting)

Chocolate Filling

  • 2 tbsp dark chocolate
  • 1 tsp melted coconut oil (measure after melting)

Instructions
 

  • Line 12 cavities of a mini cupcake pan with liners.
  • Mix together the creamy peanut butter and 1 tbsp melted coconut oil until well combined.
  • Evenly distribute half of the peanut butter mixture between the 12 cupcake liners.
  • Microwave the dark chocolate chips with 1 tsp of melted coconut oil until a drizzly consistency is achieved, about 30 seconds.
  • Evenly distribute the melted chocolate between the 12 cupcake liners to fill the center of each peanut butter cup.
  • Distribute the remaining peanut butter mixture evenly between the 12 cups.
  • Freeze the chocolate peanut butter cups for at least 2 – 3 hours to allow them to harden and set.

*Note: These chocolate peanut butter cups melt very fast. I like to store them in the freezer and remove one just before I’m ready to eat it. That way, it will have a chance to thaw out a bit without completely melting.
