After that, you will simply plate your pancakes and add your toppings – the creamy peanut butter, jelly, and pure maple syrup. Finally, you will have delicious, budget friendly, gluten free, and vegan banana oat pancakes that are ready to enjoy.

Vegan Peanut Butter and Jelly Pancakes
Ingredients
Pancakes
- 1/2 cup old fashioned rolled oats
- 1/2 medium overripe banana
- 1/4 tsp baking soda
- 1/2 cup nut milk (I used unsweetened vanilla almond milk)
- 1/2 tsp pure vanilla extract
Toppings
- 2 tbsp blueberry jelly (I used homemade blueberry jam)
- 1 tbsp creamy peanut butter
- pure maple syrup to taste
Instructions
- Add the rolled oats, banana, baking soda, nut milk, and pure vanilla extract to a high speed blender.
- Blend until a smooth consistency is achieved.
- Pour dollops of batter onto a greased pan or pancake griddle over low heat.
- Cook the pancakes for a few minutes on each side until golden brown. You'll know they're ready to flip when they start to bubble.
- Plate the pancakes.
- Top the pancakes with the creamy peanut butter, blueberry jelly, and pure maple syrup to taste.
