Easy Smashed Chickpea Avocado Sandwich

Easy Smashed Chickpea Avocado Sandwich
Good morning friends! Today I am so excited to share a super simple lunch recipe. On busy workdays, this smashed chickpea and avocado sandwich is one of my favorite no bake recipes to whip up.
When it comes to cooking lunch, I like things that are quick, easy, and portable. This chickpea avocado sandwich is exactly that. You can pack it up and take it with you for a healthy lunch. Or, if you are working from home, it will be ready to enjoy in a matter of minutes.
I love to add variety to my diet, and this sandwich is packed with plant based protein from the chickpeas as well as a source of fat from the avocado. Other key add-ins, such as the nutritional yeast seasoning, provide additional flavor and nutrients.
When I make recipes like this smashed avocado and chickpea sandwich, I’m reminded of how easy it truly is to make a tasty, healthy meal at home with just a few simple ingredients. I hope you guys love this recipe just as much as I do. Now, let’s get right into the list of ingredients we will use to create this fantastic sandwich.
Smashed Chickpea Avocado Sandwich – Ingredients
- Bread – You will need two slices of bread for this sandwich recipe. You can choose whichever kind you like. Today, I spread my chickpea avocado mixture onto two slices of toasted “Daily Bread” from Trader Joe’s. This was my first time trying it and I really like it. I have also tried my chickpea avocado mixture on rice cakes, Dave’s English muffins, and fresh sourdough bread. The mixture tastes incredible on each and every one of them. Just make sure to layer your chickpea avocado mixture on nice and thick.
- Chickpeas – I used canned chickpeas for simplicity sake. My canned chickpeas were the salted kind, so if you use unsalted chickpeas, you will probably need to add a bit more salt to this recipe than I did. Make sure to drain and rinse your chickpeas well before mashing them. You don’t want any of the liquid getting into your chickpea avocado mixture.
- Avocado – Avocado is the other key ingredient for this recipe. It is one of my favorite vegan healthy fat sources. It also adds some much needed color and flavor to this meal. Get yourself a fresh, ripe one that is soft and ready to eat.
- Chopped Cucumber – The chopped cucumber adds a nice crunch and refreshing taste to this chickpea and avocado sandwich. You will want to chop it up into small pieces.
- Nutritional Yeast Seasoning – The nutritional yeast seasoning adds a slight cheesy flavor to this recipe. It also provides some vitamin B12. It is one of my favorite seasonings to use in savory recipes such as this one.
- Yellow Mustard – This ingredient provides the chickpea avocado mixture with some extra flavor. I used the Trader Joe’s organic yellow mustard, which is one of my favorites. You can use whichever yellow mustard you have on hand or enjoy most.
- Garlic Powder – The garlic powder adds a ton of flavor to the avocado chickpea mix, so it is the first key spice you will need.
- Onion Powder – Onion powder is another essential spice you will need for this recipe.
- Paprika – The paprika adds additional flavor to the chickpea avocado mixture as well.
- Salt – The salt is the first ingredient that you will adjust to your own taste. I like to add a little bit to my mixture, taste it, and then repeat until I get the flavor I desire.
- Black Pepper – Just like with the salt, you will want to add this ingredient to taste. I add a little bit at a time until I get the flavor that I want 🙂
- Toppings – There are many toppings to choose from. I added fresh spinach and sliced roma tomato to mine. These are two sandwich staples for me, and they taste especially good on top of the chickpea avocado mixture, so I highly recommend them.

Easy Smashed Chickpea Avocado Sandwich
Ingredients
- 2 slices bread of choice
- 1/2 cup canned chickpeas (drained and rinsed)
- 1/4 cup mashed avocado
- 2 tbsp finely chopped cucumber
- 1 tsp nutritional yeast seasoning
- 1/2 tsp yellow mustard
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp paprika
- salt to taste
- black pepper to taste
Instructions
- Mash the chickpeas with a fork until a paste consistency is achieved. If you want a chunkier mixture, leave some chickpeas whole.
- Add in the mashed avocado and mix well to combine.
- Mix in the yellow mustard, nutritional yeast seasoning, garlic powder, onion powder, and paprika.
- Add salt and pepper to taste.
- Gently fold in the chopped cucumber.
- Toast two slices of your favorite bread.
- Spread half of the chickpea and avocado mixture on each piece of toast.
- Add whatever toppings you'd like. I added sliced tomato and fresh spinach to mine.
- Smash both sides of your sandwich together, cut it in half, and enjoy!
