Easy Smashed Chickpea Avocado Sandwich

Ingredients
  

  • 2 slices bread of choice
  • 1/2 cup canned chickpeas (drained and rinsed)
  • 1/4 cup mashed avocado
  • 2 tbsp finely chopped cucumber
  • 1 tsp nutritional yeast seasoning
  • 1/2 tsp yellow mustard
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp paprika
  • salt to taste
  • black pepper to taste

Instructions
 

  • Mash the chickpeas with a fork until a paste consistency is achieved. If you want a chunkier mixture, leave some chickpeas whole.
  • Add in the mashed avocado and mix well to combine.
  • Mix in the yellow mustard, nutritional yeast seasoning, garlic powder, onion powder, and paprika.
  • Add salt and pepper to taste.
  • Gently fold in the chopped cucumber.
  • Toast two slices of your favorite bread.
  • Spread half of the chickpea and avocado mixture on each piece of toast.
  • Add whatever toppings you'd like. I added sliced tomato and fresh spinach to mine.

  • Smash both sides of your sandwich together, cut it in half, and enjoy!
