Mash the chickpeas with a fork until a paste consistency is achieved. If you want a chunkier mixture, leave some chickpeas whole.
Add in the mashed avocado and mix well to combine.
Mix in the yellow mustard, nutritional yeast seasoning, garlic powder, onion powder, and paprika.
Add salt and pepper to taste.
Gently fold in the chopped cucumber.
Toast two slices of your favorite bread.
Spread half of the chickpea and avocado mixture on each piece of toast.
Add whatever toppings you'd like. I added sliced tomato and fresh spinach to mine.
Smash both sides of your sandwich together, cut it in half, and enjoy!
