Good morning friends. Today I woke up and saw that it was only 25 degrees out! When it is extra chilly in the morning, I like to wait until the late afternoon to run in slightly warmer conditions.
While I do prefer to get my run completed in the morning most of the time, there is one perk to running later in the afternoon. I can eat a larger breakfast than I typically would. When I run early in the morning, I will just have a small bowl of oatmeal, a piece of toast, a banana, etc. I usually wait about 30 minutes after I eat to head out for my run. This seems to work best for me personally.
However, on days when I run later, I love to shake up my breakfast and enjoy something a bit more substantial such as pancakes or waffles. Today, I was craving something sweet, so I decided to whip up my simple and delicious vegan chocolate protein waffles recipe. I knew I had to share it with all of you because it is so yummy.
I used my Dash miniature waffle maker for this recipe, and the waffles turned out perfect. This recipe is made to serve one person, but you can always double or triple the recipe if you prefer a larger breakfast or want to make extra waffles for family/friends.

How Do You Make Waffles More Moist?
A common question regarding protein waffles in particular is how to make them more moist. I find that protein waffles can turn out really dry if you don’t choose the right add-ins. For my vegan protein waffles, I like to use mashed banana to achieve a moister texture, which is exactly what I did for this recipe. The banana does a great job of adding both sweetness and moisture to this protein waffle recipe. Vegan Chocolate Protein Waffles – Ingredients
- Chocolate Protein Powder – You will start this recipe off with a vegan protein powder. As per usual, I used one of my personal favorites – the Orgain Simple protein powder in the chocolate peanut butter cup flavor. It is one of the best tasting ones I have found. It’s my tried and true, so I tend to stick with it for many of my protein recipes.
- Quick Oats – The quick oats will be blended up to form an oat flour for this waffle recipe. You will need a high speed blender or food processor to transform your oats into a flour. For gluten free waffles, you will need to use your favorite gluten free oats.
- Flax Egg – You will also need a flax egg for this recipe, which serves as the key binding agent. This ensures your waffles stay together nicely and come out looking like actual waffles. - Mashed Banana – The mashed ripe/overripe banana is used in this recipe for additional sweetness and moisture. The riper it is, the sweeter it will be. You will also want more slices for topping your waffles with after they finish cooking.
- Nut Milk – The nut milk acts as a source of liquid for this recipe. It also adds a ton of creaminess.
- Pure Maple Syrup – The pure maple syrup provides the waffle batter with additional sweetness. You can also add more to taste as a topping once your waffles finish cooking.
- Creamy Peanut Butter – The creamy peanut butter is a delicious topping which adds a ton of flavor to this recipe.
- Miniature Semi-Sweet Chocolate Chips – The chocolate chips are used as yet another tasty topping for your waffles. I highly recommend them for extra chocolate flavor.

Easy Vegan Chocolate Banana Protein Waffles
Ingredients
- 1/4 cup oats (blended into an oat flour)
- 3 tbsp vegan chocolate protein powder (I used Orgain Simple in the chocolate peanut butter cup flavor)
- 1 flax egg
- 1/3 ripe banana (plus more slices for topping)
- 1 tbsp creamy peanut butter (for topping)
- 1/2 tbsp pure maple syrup (plus more for topping)
- 1 tsp mini semi-sweet chocolate chips (for topping)
- 3 tbsp nut milk (I used unsweetened vanilla almond milk)
Instructions
- In a mixing bowl, combine the oats and protein powder.
- Add the flax egg, then mix again.
- Add in the mashed banana, nut milk, and pure maple syrup, then mix until a waffle batter forms. (Add a bit more nut milk if necessary to thin the batter).
- Preheat and grease a waffle iron (I used my Dash mini waffle maker), then fill the cavity completely with batter.
- Close the lid and cook your waffle for about 5 – 6 minutes, or until it is firm and comes up easily.
- Pull the waffle out of the iron, then continue making waffles until you've used up all of your batter.
- Top your waffles with the creamy peanut butter, mini chocolate chips, fresh banana slices, and more pure maple syrup to taste.
- Dig in and enjoy!
