Good morning everyone! Today, I am so excited to share my simple and delicious peanut butter filled cookies recipe.

As you guys know, I love all things peanut butter. It is one of my all-time favorite foods, and I like to add it into as many meals and sweet treats as I can. Not only does peanut butter taste delicious on top of sweet dishes such as oatmeal, but it’s also incredible when used to create a delicious peanut sauce for savory recipes such as salads, noodle dishes, and veggie spring rolls.

These peanut butter sandwich cookies have an icredible sweet taste, chewy texture, and they are perfect for filling with creamy peanut butter. Smash two of them together with creamy peanut butter, and you have the perfect peanut butter cookie sandwich.

I think these cookies taste best when served with a fresh, cold glass of almond milk. Anyway, let’s take a look at a few quick things to note for this recipe. Then, we will go through the list of ingredients you will need to make these delicious vegan peanut butter cookies.


What Can I Use Instead Of Butter In Peanut Butter Cookies?

While many peanut butter cookie recipes do call for butter, you can easily make vegan peanut butter cookies by using a combination of peanut butter and melted coconut oil for a source of moisture and fat. That is exactly what I used to create these vegan peanut butter filled cookies, and they turned out absolutely perfect. Making vegan peanut butter cookies is actually much simpler than you think, and this recipe is proof of that. With less than ten simple ingredients, you will have delicious and flavorful vegan peanut butter sandwich cookies in just minutes.

  • Rolled Oats – The first ingredient you will need for this recipe is rolled oats. The rolled oats are blended up into a fine oat flour to make the base of these peanut butter sandwich cookies. If you would like to make this recipe gluten free, use your favorite gluten free oats.
  • Peanut Butter – The peanut butter is an unsurprising ingredient that you will need for this recipe. I like to use a natural creamy peanut butter with only two ingredients – peanuts and salt. I find that the natural kind is more drizzly and easier to stir in with the other cookie ingredients. The creaminess of the peanut butter is absolutely crucial for the cookie dough. If you are going to sandwich your cookies together, you will want to have some extra peanut butter on hand to fill your cookie sandwiches with.
  • Pure Maple Syrup – The pure maple syrup is the main source of sweetness you will need for this recipe. A little bit truly does go a long way here. The syrup also adds stickiness and moisture to the recipe to help the cookie dough form the perfect consistency.
  • Nut Milk – The nut milk adds creaminess and more moisture to this recipe. I used unsweetened vanilla almond milk, but you can use whichever kind you have on hand or prefer. It is crucial to create a thick dough that is moist enough to easily form into peanut cookie shapes. However, the dough shouldn’t be so moist that it’s too sticky to work with. The nut milk helps the cookie dough achieve the ideal consistency.

Ingredients
  

  • 1 cup rolled oats
  • 1/4 cup creamy peanut butter
  • 3 tbsp pure maple syrup
  • 2 1/2 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 1/2 tbsp melted coconut oil
  • 1/4 tsp pure vanilla extract

Instructions
 

  • Preheat the oven to 350° F.
  • Grind up oats in high speed blender to form oat flour.

  • Combine oat flour, peanut butter, pure maple syrup, and vanilla extract in a large mixing bowl.

  • Add in almond milk gradually until a thick peanut butter cookie dough forms.

  • Line a baking sheet with parchment paper.
  • Form dough into peanut shaped cookies with hands and place them on the baking sheet.

  • Press each cookie with a fork to form the classic peanut butter cookie criss cross design.

  • Bake for about 10 minutes until golden brown.
  • Let cool completely, then eat as is or spread a thin layer of peanut butter between two cookies and press together to form cookie sandwiches.
