Homemade Peanut Butter Sandwich Cookies

Delicious peanut butter cookie sandwiches packed with healthy ingredients and a ton of flavor.

- 1 cup rolled oats
- 1/4 cup creamy peanut butter
- 3 tbsp pure maple syrup
- 2 1/2 tbsp nut milk (I used unsweetened vanilla almond milk)
- 1/2 tbsp melted coconut oil
- 1/4 tsp pure vanilla extract
Preheat the oven to 350° F.
Grind up oats in high speed blender to form oat flour.
Combine oat flour, peanut butter, pure maple syrup, and vanilla extract in a large mixing bowl.
Add in almond milk gradually until a thick peanut butter cookie dough forms.
Line a baking sheet with parchment paper.
Form dough into peanut shaped cookies with hands and place them on the baking sheet.
Press each cookie with a fork to form the classic peanut butter cookie criss cross design.
Bake for about 10 minutes until golden brown.
Let cool completely, then eat as is or spread a thin layer of peanut butter between two cookies and press together to form cookie sandwiches.
