Vegan Pumpkin Pie Chia Seed Pudding

Good morning friends! Today, I am so excited to share my simple and delicious vegan pumpkin pie chia seed pudding recipe. This pudding is packed with flavor and sweetness, and it’s the perfect no bake treat for the fall season. It is loaded with spice and so easy to make. If you enjoy the consistency of traditional chia seed pudding, you will absolutely love this pumpkin pie chia seed pudding.

Now, let’s discuss a few quick things to note for this recipe. Then, we will take a look at the list of ingredients you will need to make this vegan pumpkin pie chia seed pudding recipe a smashing success.

How long should chia seeds soak for pudding?

Chia seeds are very unique in that the absorb the liquid they are soaked in to form a thick, gel-like consistency. This makes them perfect to use in recipes like chia seed pudding.

In general, I ilke to add my chia seeds to a mixture of nut milk, liquid sweetener (pure maple syrup), and other ingredients that vary depending on which flavor of chia seed pudding I want to create. For this recipe specifically, I wanted to create a pumpkin pie flavor. So, I added canned pumpkin as well as a few key spices to get that delicious pumpkin pie flavor.

Once all of the ingredients are mixed together thoroughly, I like to pop the container in the refrigerator overnight to set. Of course, you could probably enjoy your chia seed pudding a few hours later. It just depends on the consistency you enjoy most. The longer that the chia seeds sit in the pudding, the thicker the consistency becomes. So, if you want your chia pudding to be nice and thick when you eat it, I suggest prepping your pudding at least the evening before you plan to eat it. That way, it will be able to sit in the refrigerator overnight to set.

What Happens If You Don’t Soak Chia Seeds?

This is a common question when it comes to making chia seed pudding. And while you techinically don’t have to soak the chia seeds in the mixture before eating your chia pudding, I consider it to be a necessary step.

This is because if you don’t give the chia seeds a bit of time to set in the mixture before you eat your chia pudding, it won’t form a thick, gel-like consistency. The mixture simply won’t have the right texture, so I find it best to prep your chia seed pudding in advance. That way, your chia pudding will achieve that thick, delicious, and creamy texture. Keep in mind that no matter which flavor of chia seed pudding you choose to create, the soaking step is extremely important to achieve a thick chia pudding texture.

Now that we have discussed a few quick things to note for this recipe, let’s dive into the list of ingredients you will need to make this vegan pumpkin pie chia seed pudding recipe.
