My version of this delicious s’mores cookie packs in vegan marshmallows and chocolate chips. The base is made of oats, and the cookies do not require graham crackers. These cookies are one of my new favorite treats and I’ve already made quite a few batches of them.

However, I have found a few vegan options at a couple of grocery stores. First off, Trader Joe’s sells vegan mini marshmallows during the winter months at a pretty affordable price. The only downside is that they are seasonal and only available during the late fall and winter months (at least that has been the case at my local Trader Joe’s). Fortunately, Whole Foods also sells some vegan mini marshmallows.
I have purchased vegan mini marshmallows from both Whole Foods and Trader Joe’s, and I liked the flavor and texture of each one. So, I definitely recommend both options.

Best Easy Vegan S’mores Cookies
Ingredients
- 1/2 cup quick cooking oats (blended into a fine oat flour)
- 1/4 cup bread flour
- 2 tbsp minature vegan marshmallows (I used Trader Joe's)
- 1 1/2 tbsp semi-sweet chocolate chips
- 1 tbsp coconut sugar
- 1/2 tsp baking soda
- 2 tbsp unsweetened applesauce
- 2 tbsp pure maple syrup
- 1 tbsp creamy almond butter
- 1/2 tbsp nut milk (I used unsweetened vanilla almond milk)
- 1/2 tsp melted coconut oil (measure after melting)
- 1/4 tsp pure vanilla extract
Instructions
- Preheat the oven to 350° F.
- In a large mixing bowl, combine the oat flour, bread flour, coconut sugar, and baking soda.
- Make a well in the center of the bowl, then add in the applesauce, pure maple syrup, almond butter, nut milk, melted coconut oil, and vanilla extract.
- Mix all liquid ingredients together, then slowly mix the wet into the dry to form a sticky cookie dough.
- Gently fold in the chocolate chips and mini marshmallows.
- Scoop six equal sized cookie dough balls onto a lined or greased baking sheet.
- Flatten the dough balls with the back of a spoon to form round cookie shapes (you can place a piece of parchment paper between the spoon and dough so that the dough doesn't stick to the spoon).
- Bake the cookies for about 10 minutes, or until golden brown.
