The best soft baked vegan s'mores cookies recipe made with marshmallows and chocolate chips.

- 1/2 cup quick cooking oats (blended into a fine oat flour)
- 1/4 cup bread flour
- 2 tbsp minature vegan marshmallows (I used Trader Joe's)
- 1 1/2 tbsp semi-sweet chocolate chips
- 1 tbsp coconut sugar
- 1/2 tsp baking soda
- 2 tbsp unsweetened applesauce
- 2 tbsp pure maple syrup
- 1 tbsp creamy almond butter
- 1/2 tbsp nut milk (I used unsweetened vanilla almond milk)
- 1/2 tsp melted coconut oil (measure after melting)
- 1/4 tsp pure vanilla extract
Preheat the oven to 350° F.
In a large mixing bowl, combine the oat flour, bread flour, coconut sugar, and baking soda.
Make a well in the center of the bowl, then add in the applesauce, pure maple syrup, almond butter, nut milk, melted coconut oil, and vanilla extract.
Mix all liquid ingredients together, then slowly mix the wet into the dry to form a sticky cookie dough.
Gently fold in the chocolate chips and mini marshmallows.
Scoop six equal sized cookie dough balls onto a lined or greased baking sheet.
Flatten the dough balls with the back of a spoon to form round cookie shapes (you can place a piece of parchment paper between the spoon and dough so that the dough doesn't stick to the spoon).
Bake the cookies for about 10 minutes, or until golden brown.
